23.01.2022 Chunky Monkey Protein Smoothie Loaded with chocolate, peanut butter and banana, this 5-Minute Chunky Monkey Protein Smoothie is a healthy breakfast or satisfying snack to fuel you through your day! Ingredients:... 1-2 cups ice (2 cups for a very thick smoothie) 1 banana sliced and frozen 1 cup Unsweetened Vanilla Almond Milk or other milk of choice 1 scoop chocolate protein powder 1 tablespoon unsweetened cocoa powder 1-2 tablespoons peanut butter Pinch of salt Optional Garnish: chocolate chips Instructions: Add all ingredients to a blender and puree until thick and smooth. Garnish with chocolate chips, if desired. Serve immediately! Yum!

19.01.2022 CRISPY ROASTED CHICKPEAS Ingredients: 1 1/2 cups cooked chickpeas, drained and rinsed Extra-virgin olive oil, for drizzling... Sea salt Paprika, curry powder, or other spices (optional) Instructions: Preheat the oven to 200C and line a large baking sheet with parchment paper. Spread the chickpeas on a kitchen towel and pat them dry. Remove any loose skins. Transfer the dried chickpeas to the baking sheet and toss them with a drizzle of olive oil and generous pinches of salt. Roast the chickpeas for 20 to 30 minutes, or until golden brown and crisp. Ovens can vary, if your chickpeas are not crispy enough, keep going until they are! Remove from the oven and, while the chickpeas are still warm, toss with pinches of your favorite spices, if using. Store roasted chickpeas in a loosely-covered container at room temperature. They are best used within two days. ENJOY :)

17.01.2022 Whole Wheat Pasta With Broccoli and Parmesan here is a quick + easy low ingredient recipe you can all use in lock-down! INGREDIENTS... 4-ounces dry whole wheat fusilli 1-teaspoon olive oil 2-cups broccoli florets, cut into bite-sized pieces Salt +Pepper 3-ounces shredded Parmesan DIRECTIONS 1-Cook pasta according to package directions. Drain. 2-In a large skillet over medium-high heat, heat oil. Add broccoli, season with salt and pepper, and cook, stirring occasionally, until florets are al dente and browned in places, 4 minutes. Add cooked pasta and Parmesan; toss to combine. ENJOY

16.01.2022 Watermelon and kiwi ice blocks Ingredients 170 g watermelon (chopped,seeds removed) 2 tsp natural unrefined cane sugar... 50 g kiwifruit (peeled) Method 1 Put the watermelon in a blender and whizz. Taste the mixture to see if you need to add any extra sugar; this will depend on the sweetness of the fruit. Add a little sugar at a time until the sweetness is to your taste. 2 Divide the watermelon mixture between the moulds until they are three-quarters full. 3 Insert the sticks with the stick-holders and place in the freezer. Freeze for about 3 hours or until the top of the mixture is quite frozen. 4 For the second layer, whizz the kiwi and 25ml of water in a blender, again adding sugar to taste. How much sugar you need depends on how ripe the kiwis are; the riper they are the less sugar you’ll need. 5 Take off the stick-holders and pour the kiwi mixture into the moulds, leaving a 1cm gap at the top. There is no need to put the stickholder back on. Return the moulds to the freezer. ENJOY
