24.01.2022 SUNDAY RECIPE - Chipotle Honey Chicken Skewers - Recipe in US metrics... Ingredients: 32 ounces boneless and skinless chicken breasts 4 pieces 1/4 cup honey raw, unfiltered preferred 1/4 cup tomato paste 2 tablespoons apple cider vinegar 1 teaspoon chipotle chili powder 1 garlic clove very finely chopped 1/2 teaspoon salt optional Method: Slice chicken into very thin strips with a very sharp knife. Thread accordion-style onto wooden skewers. In a small bowl, whisk together honey, tomato paste, apple cider vinegar, chipotle chili, optional salt, and chopped garlic. Spoon sauce over skewers. Cook skewers on a hot grill and cook for 10-12 minutes or until chicken is fully cooked, basting with sauce and turning every 2-3 minutes to evenly cook the entire skewer of chicken. Alternately, the skewers can be baked in an oven preheated to 400 degrees for 16-18 minutes, or until fully cooked.

21.01.2022 SUNDAY RECIPE - Moroccan Lentil soup - Ingredients: 1 tablespoon avocado oil... 1 cup chopped onion 1 cup chopped celery 1 cup chopped carrot 1 cup chopped white fingerling potato 2 garlic cloves , minced 1 teaspoon sea salt (+ more to taste) 1 teaspoon black pepper (+ more to taste) 2 teaspoons turmeric 2 teaspoons ground cumin 2 teaspoons ground ginger 2 teaspoons smoked paprika 1 teaspoon ground cinnamon 1 cup green or brown lentils 1 cup red lentils 4 cups vegetable broth 2 cups water 1/4 cup tomato paste 1 cup almond milk 1 tablespoon lemon juice 2 - 3 cups spinach Method: Heat the oil in a large stockpot or dutch oven. Add onions, celery, carrot, potato and garlic and saute for about 5 minutes until everything softens slightly. Season with salt, pepper and the spices and cook about 2 minutes. Add lentils and saute 1 - 2 minutes, then add the broth, water and tomato paste. Stir to combine and until the tomato paste has dissolved. Bring the soup to a boil, cover and reduce to simmer for 30 minutes. Remove from heat and stir in almond milk, lemon juice, and spinach, and stir until the spinach has wilted. Serve immediately and top with your desired toppings. For garnishes, I like to do a dollop of coconut yogurt, some fresh parsley, pepper flakes, cracked pepper and jalapeno slices. A little spicy, a little creamy and so good!

10.01.2022 SUNDAY RECIPE - Chicken Katsu - Ingredients: oil for frying... 2 large chicken breasts salt and pepper 2 cups flour 3 eggs beaten 2 cups panko tonkatsu sauce for serving sliced green onions and sesame seeds Method: In a large skillet preheat oil to medium-high heat. Start by slicing the chicken in half lengthwise and pound to a quarter inch thickness. In three separate bowls, add the flour, beaten eggs, and Panko. Start by coating the chicken in the flour, dredge in the egg mixture and finish with the Panko. Add the chicken to the hot oil and fry for about 3-4 minutes each side or until the chicken is golden brown and heated through.

08.01.2022 SUNDAY RECIPE - Skirt Steak Avocado Chimichurri - INGREDIENTS For the avocado chimichurri sauce:... 1 cup cilantro leaves, packed 1 cup parsley leaves, packed 1 tablespoon roughly chopped garlic 1/2 teaspoon kosher salt 1/2 teaspoon ground cumin 1/2 teaspoon red pepper flakes 1/4 cup red wine vinegar 1/2 cup extra-virgin olive oil 1 medium avocado, diced about 1 cup For the skirt steak: 1 pound skirt steak 1 teaspoon Kosher salt, as needed for seasoning 1/2 teaspoon black pepper, as needed for seasoning 2 tablespoons olive oil METHOD 1 Prepare the chimichurri sauce: Add the cilantro, parsley, garlic, salt, cumin, and red pepper flakes to a food processor. Pulse until the leaves are coarsely chopped, about 5 pulses. Add the red wine vinegar, pulse 5 times. Add the olive oil, pulse 5 times. The chimichurri sauce should be emulsified and the herbs coarsely chopped. 2 Add the avocado: Transfer the chimichurri sauce to a medium bowl. Cut the avocado into 1/2-inch dice. Add the avocado to the chimichurri and gently stir to combine. Cover and refrigerate until ready to use. 3 Cut the steak: If the skirt steak comes in a long strip, cut across the grain into 2 to 3 smaller pieces, about 5 to 7 inches in length. This will allow the steak to fit better in the pan. 4 Dry and season the steak: Thoroughly pat dry each steak with paper towels on each side. The surface should be very dry to help brown the surface of the meat. Generously season each side of the steaks with salt and pepper. 5 Heat the pan: Heat a large 12-inch cast-iron skillet over high heat for 3 minutes. Once hot add the olive oil. 6 Cook the steak: Use tongs to carefully add the steak to the pan, then press down on the surface a few times for more contact. Sear the first side until browned, about 2 to 4 minutes depending on the thickness of the meat. Flip and cook another 2 to 4 minutes.
