22.01.2022 If you are a seafood fan this is a must try and in just 6 easy steps! :D Ingredients - 300 g white basmati rice - 6 heaped teaspoons green olive tapenade... - 350 g ripe mixed-colour cherry tomatoes - a bunch of fresh basil , (15g) - 500 g white fish fillets , such as haddock, skin off, pin-boned, from sustainable sources. Method 1. In a large shallow casserole pan on a high heat, mix the rice with 2 heaped teaspoons of tapenade, then pour over 600ml of water. 2. Put the lid on and let it come to the boil while you halve the tomatoes and, in a bowl, mix them with 1 tablespoon each of olive oil and red wine vinegar. 3. Taste, season to perfection with sea salt and black pepper, and tear in most of the basil leaves. 4. Cut the fish into four equal-sized pieces and place in the pan, pushing them into the rice. 5. Scatter over the dressed tomatoes. Put the lid back on and boil for 10 minutes, or until the rice is cooked through, then remove the lid and cook for a further 2 minutes until all the liquid has evaporated. 6. Spoon the remaining tapenade over the fish, pick over the remaining basil leaves, drizzle lightly with extra virgin olive oil, and dish up.

Quick and simple to finish the week :) INGREDIENTS 500gram extra lean beef mince 2 tsp ground cumin... 1 tsp ground coriander 420g can Mexican style 3 bean mix 2 x 250g microwave brown rice & quinoa 1 small avocado, peeled, pitted and diced 4 tomatoes, diced 1 x 120g baby leaf spinach 2 carrots, grated 1 lime fresh coriander leaves, chopped (optional) METHOD 1. Brown beef mince in non-stick frying pan over medium to high heat. Add cumin, coriander and chilli and mix. When mince is cooked through, stir in drained beans. 2. Prepare rice and quinoa as per packet instructions. Divide among four bowls, and top with mince and bean mix, chopped avocado, diced tomatoes, baby spinach and carrot. Squeeze over lime and finish with chopped coriander, if using.

20.01.2022 Yummmmm! These choc almond bars are perfect to make on your Sunday to snack on during the week! Or to eat all at once today! ... Happy making! INGREDIENTS 1 cup almonds 1/3 cup shredded coconut 1/2 cup Chocolate 2 tbsp Cacao powder 6 Medjool dates 1/2 cup nut butter 1/4 cup rice malt syrup Pinch of sea salt METHOD 1 add almonds into a food processor and process until roughly chopped (it should be somewhat ground but I like to leave a few chunkier bits in there for texture) 2 add in shredded coconut, protein powder, cacao & salt and process for 10-15 seconds until combined. 3 Spoon in nut butter, rice malt syrup & and add in Medjool dates. Process on low/medium speed until all ingredients are well-combined and you reach a consistency that sticks when pressed between your fingers. 4 Press into a lined square tin and place into the fridge for 20 minutes to slightly harden. Slice into bars, wrap or stack on top of each other with non-stick baking paper in between. Will keep for up to 2 weeks in the fridge or 1-2 months in the freezer (leave at room temp to soften before serving).

14.01.2022 Poached Egg & Avocado Breakfast Salad Spring has Sprung! Let’s enjoy this Breakfast salad together! Ingredients: ... 2 Eggs 1 Avocado (sliced) 7 Cherry Tomatoes (halved) 2 Cups of Lettuce and/or Baby Spinach 1/2 Cup Quinoa (cooked) 1 Tablespoon of Olive Oil 1 Tablespoon of crushed walnuts (optional) Pinch of Salt & Pepper (to serve) PREPARATION: Step 1: Poach Eggs and set aside. Step 2: Create the salad by layering the lettuce, tomatoes, cooked quinoa, avocado and walnuts however you like in a bowl. Step 3: Drizzle olive oil, add the poached eggs and season with a pinch of salt and pepper to taste. Step 4: ENJOY!

Breakfast bruschetta Ingredients ... 8 eggs 1 tomato, diced 1 red capsicum, diced 1/3 cup fresh basil leaves, chopped 1 cup baby spinach 4 slices of Multigrain Bread 2 tbs olive oil Method 1. Bring saucepan of water to boil and add eggs for 5 minutes. 2. Meanwhile, prepare a bowl of icy water to plunge cooked eggs into immediately when the 5 minutes is up. 3. Mix diced tomato and capsicum with the chopped basil and mixed salad leaves. Toast bread for 3 minutes. 4. When eggs are cool to touch, gently peel them and cut in half. 5. Top toast with tomato mix and boiled eggs. Drizzle with olive oil.

Yummy!! * Egg - 1 egg... * Buttermilk - 1/4 cup * Butter - 1 tsp * Flour - 1/3 cup * Baking Powder - 1/2 tsp * Berries - 1 punnet * Vanilla whey protein powder - 1 tbsp * Olive oil - 1 tbsp * Ricotta, for serving- 1 tbsp 1. Add egg, buttermilk and butter in a bowl and whisk together. 2. Stir in flour, baking powder and protein powder. 3. Add the berries to the mixture once combined well. 4. Cook 2-4 tbsp. batter (depending on what size you want), over medium heat for 3 mins on each side, or until pancake is brown. 5. Serve with ricotta if desired.
