16.01.2022 Your Friday night 'Fake-out' is sorted! Make your own Butter Chicken with Cauliflower Rice tonight for a healthier alternative. SERVES 4 INGREDIENTS:... 2 tsp Coconut oil 100g Brown onion, diced 4 cloves Garlic, crushed 2 tsp Garam masala 1 tsp Cardamom 1 tsp Ginger 1 tsp Cumin 1 tsp Turmeric 45g Tomato paste 30ml Lemon juice 400ml Coconut cream 600g Chicken breast, diced 400g Cauliflower rice 40g Coriander METHOD: 1. Sauté the onion and garlic in the coconut oil until golden in a large pot or deep frying pan, add in all the spices and cook for a further minute. Be careful not to burn the spices. 2. Add the tomato paste, lemon juice and coconut cream. Stir until combined and add in the chicken breast. 3. Cook for 20 minutes until the chicken is cooked through. 4. Steam, lightly fry or microwave the cauliflower rice, season. 5. Season and taste the curry, add spice if you prefer some heat. 15.01.2022 Breakfast is served with this delicious Breakfast Burrito!! SERVES 1 INGREDIENTS:... 1 Large wholemeal wrap 30g Red onion, diced 50g Tomato, diced 10g Coriander, chopped 1 Egg, whisked Salt and pepper Oil spray METHOD: 1. Sautee the red onion in a large non stick frying pan until nearly cooked, add in the chopped tomatoes and sauté for a further 2 minutes. Season and stir through the coriander. Set aside. 2. Whisk the egg with a dash of milk of your choice, re-spray the pan. Cook the egg omelette style until cooked through. 3. Take your wrap and layer with the cooked tomato and onion and top with the egg. Season and sprinkle with a little more coriander. 4. Fold the wrap around the filling burrito style. Place the burrito folded side down into the frying pan and leave it there until the wrap becomes golden, flip and cook the other side until golden. Serve! 04.01.2022 One Pan Chicken with Creamy Basil Sauce SERVES 2 INGREDIENTS:... 200g Chicken breast, butterflied 200g Pumpkin, cut into rounds 10g Garlic, crushed 50g Brown onion, diced 1 tbsp Butter 150g Greek yoghurt 75ml Chicken stock 200g Broccolini, ends removed Salt and pepper 30g Parmesan, grated 30g Basil, chopped fine METHOD: 1. Preheat your oven to 180C. Line a baking tray with baking paper, place the chicken breasts and pumpkin onto the paper, spray with oil and place in the oven for 20 minutes. 2. Meanwhile, take a large frying pan and place it over a medium heat. Add the butter. Once melted sauté the garlic and onion until golden. 3. Add in the chicken stock, salt and pepper and yoghurt. Bring to a simmer. 4. Steam the broccolini. 5. Remove the chicken and pumpkin from the oven, place them into the frying pan with the simmering sauce. 6. Cook for a further 5 minutes until the pumpkin is soft and the chicken is cooked through.
