20.01.2022 SERVES 4 INGREDIENTS Sweet potato, diced- 200g Carrot, diced - 150g Olive Oil Spray-... Cumin- 5g Garlic powder- 5g Onion powder- 5g Sweet paprika- 5g Ginger dried- 2.5g Zucchini, sliced- 200g Onion, diced- 100g Lean beef mince- 500g Avocado, diced- 150g Cherry tomato, halved- 200g Feta- 80g Coriander- 40g Greek yoghurt- 160g Salt and pepper- METHOD Preheat your oven to 200 degrees. Spray a roasting pan with olive oil and add the sweet potato and carrot. Add the spices to a bowl and season. Toss half through the sweet potato and carrot, spray with oil and place in the oven. Bake for 10 minutes. After 10 minutes add the zucchini and place back in the oven. Meanwhile add some oil spray and the onion to a frying pan over a medium high heat. Sautee for 2-3 minutes and then add the mince. When the mince is nearly cooked add the remaining spices. When the potato, carrot and zucchini are nearly cooked remove from the oven. Pour the mince mixture over the potato and carrots and then top that with the cherry tomatoes. Sprinkle over the feta and place back in the oven for 10 minutes. Remove from the oven and serve topped with coriander, avocado and a dollop of yoghurt. 11.01.2022 SERVES 2 INGREDIENTS Haloumi, halved longways to make 2 cheese patties- 250g Large field mushrooms- 2 Carrots, cut into batons- 300g... Olive oil- 1 Pesto- 30g Sliced tomato- 50g Cos lettuce leaves- 50g Salt and pepper- METHOD Preheat your oven to 200 degrees. Spray the bottom of a large baking tray with olive oil, toss through the carrot battons and bake in the oven for 20-25 minutes, tossing half way. Meanwhile in a smaller tray place the mushrooms face down and bake for 5 minutes, remove from the oven, flip face up and place the haloumi inside. Place back in the oven and cook for 10 minutes until the haloumi is starting to go golden. Carefully remove the haloumi burger, top with half the pesto and sliced tomato. Season and wrap 2 large cos lettuce leave around the whole burger creating a lettuce bun to seal in the juices. 08.01.2022 SERVES 2 INGREDIENTS Zucchini, spiralised into zoodles- 600g Cherry tomato, halved- 350g Garlic, crushed- 4 cloves... Brown onion, diced- 50g Olive oil- 1 tbsp Prawns, tail on- 350g Salt and pepper- Parmesan optional- 40g METHOD Heat a large frying pan over a medium high heat, add the olive oil, garlic and onion and sauté into golden. Add the tomatoes, salt and pepper and cook for 5 minutes until the tomato starts to break down. Add in the prawns and cook until they're pink and cooked through. Toss through the zucchini pasta, season again and enjoy. Feel free to top with some chili flakes, parmesan, basil leaves or a big squeeze of lemon juice. 01.01.2022 SERVES 1 INGREDIENTS Eggs, whisked- 2 Butter, melted- 75g Banana, mashed- 150g... Dates, chopped- 60g GF flour- 40g Protein powder- 20g Macadamia, chopped- 60g Cream cheese- 200g Honey- 30g Vanilla essence- 5g METHOD Preheat the oven to 180C. Place eggs, oil, banana, dates and honey in a small food processor, blend on medium speed until combined. Stir through chopped macadamias. Scoop batter into mini muffin pan lined with mini muffin patty cases, mixture should make 10. Bake at 180 for 13-15 minutes, keep in mind that oven temperatures may be vary. Remove from oven, cool in tray for five minutes then turn out onto rack to finish cooling. Blend together the cream cheese, honey and vanilla until smooth. Spread onto the cooled muffins and serve!
