21.01.2022 Weight Loss Vegetable Soup Ingredients: 1 small onion , diced 2 cloves garlic , minced... 1 cup diced carrots 4 cups chopped cabbage (approx. 1/4 head of cabbage) 1 cup green beans (1" pieces) 2 whole bell peppers , chopped 1 can (28 oz) low sodium diced tomatoes 6 cups low sodium beef broth 2 tablespoons tomato paste 2 bay leaves 1/2 teaspoon each thyme & basil pepper to taste 2 cups broccoli florets 2 cups sliced zucchini Instructions: In a large pot cook onion & garlic over medium heat until slightly softened. Add carrots, cabbage & green beans and cook an additional 5 minutes. Stir in bell peppers, undrained tomatoes, broth, tomato paste, bay leaves and seasonings. Simmer 6-7 minutes. Add in zucchini & broccoli. Simmer an additional 5 minutes or until softened. Remove bay leaves before serving. Enjoy

20.01.2022 Yummmmmm Grab some yummy goodness this morning members Have a killer workout, a Great Friday and enjoy a delicious snack.

20.01.2022 Healthy nuts and bolts slice 100g pitted fresh dates, chopped 150g (1 cup) salted peanuts 80g (1/2 cup) natural almonds, chopped... 45g (1/4 cup) pepitas 35g puffed rice 2 tablespoons honey 2 tablespoons almond butter 2 tablespoons macadamia oil 1 teaspoon ground cinnamon Step 1 Preheat oven to 160/140C fan-forced. Lightly spray a 20 x 30cm baking pan with oil and line the base and 2 long sides with baking paper. Step 2 Place the dates and 2 tablespoons boiling water in a small bowl. Set aside for 3 minutes to soak. Use a fork to coarsely mash. Step 3 Meanwhile, process the peanuts, almonds and pepitas in a food processor until coarsely chopped. Transfer to a large bowl. Add the puffed rice and stir to combine. Step 4 Place the date mixture, honey, almond butter, oil and cinnamon in a small saucepan. Cook, stirring, for 2 minutes or until well combined and warmed through. Add to the nut mixture and stir until well combined. Step 5 Press the mixture firmly into the prepared pan, smoothing the surface with the back of a spoon. Bake for 35-40 minutes or until a deep golden brown. Set aside to cool completely in the pan. Step 6 Cut the slice into 20 pieces. Store in an airtight container for up to 5 days.

15.01.2022 Dairy-free chocolate avocado mousse tart INGREDIENTS 2 teaspoons coconut oil, to grease 1 egg, lightly beaten... 2 1/4 cups hazelnut meal 1/4 cup dutch-processed cocoa powder 1 tablespoon dark agave syrup (see notes) 1/4 cup coconut oil, melted, extra 125g strawberries 125g fresh raspberries AVOCADO MOUSSE 2 small ripe avocados, chopped 1 large over-ripe banana, chopped 1/2 cup dutch-processed cocoa powder 1 teaspoon vanilla bean paste 1/2 cup dark agave syrup 2 egg whites METHOD Step 1 Preheat oven to 180C/160C fan-forced. Place a baking tray in the oven. Grease a 2cm-deep, 22cm round (base) loose-based, fluted tart pan with coconut oil. Step 2 Combine egg, hazelnut meal, cocoa, agave syrup and extra coconut oil in a bowl. Press firmly over base and side of prepared pan. Place pan on hot tray. Bake for 20 minutes or until golden. Set aside to cool completely. Step 3 Make Avocado Mousse; Process avocado, banana, cocoa, vanilla and agave syrup in a food processor until smooth and combined. Transfer to a large bowl. Step 4 Using an electric mixer, beat egg whites until soft peaks form. Fold egg whites, in 2 batches, into avocado mixture. Spoon into pan, spreading to level. Refrigerate for 2 hours or until set. Remove from fridge (see notes). Top with strawberries and raspberries. Serve immediately. ENERGY - 1366 KJ

12.01.2022 Mixed berry and avocado pancakes 1/2 overripe avocado, stoned, peeled, mashed 1 Coles Australian Free Range Egg 1 cup (250ml) buttermilk... 1 cup (150g) self-raising flour 1 tablespoon caster sugar 1/2 teaspoon baking powder 1/2 cup fresh or frozen blueberries 1/2 cup fresh or frozen raspberries 20g butter, melted 2 lemons, zested, juiced 1/2 cup (110g) caster sugar, extra Step 1 Place avocado, egg and buttermilk in a blender. Blend until smooth. Combine the flour, sugar and baking powder in a bowl. Add the avocado mixture. Stir to combine. Add the blueberries and raspberries and stir to combine. Step 2 Heat a non-stick frying pan over medium-low heat. Brush with a little melted butter. Pour three 1/4-cup portions of batter around the pan. Use a small palette knife to spread each to an 8cm disc. Cook for 2 mins or until golden underneath and bubbles appear on the surface. Turn and cook for 2 mins or until cooked through. Transfer to a plate and cover to keep warm. Repeat with remaining batter to make 12 pancakes. Step 3 Meanwhile, combine the lemon juice, extra sugar and 1/4 cup (60ml) water in a medium saucepan. Place over low heat. Cook, stirring, for 2 mins or until the sugar dissolves. Increase heat to high. Bring to the boil. Cook for 3-4 mins or until the syrup thickens slightly. Set aside to cool. Add the lemon zest and stir to combine. Step 4 Divide the pancakes evenly among serving plates. Drizzle with the syrup

01.01.2022 Delicious Blackened Salmon Made with garlic, ghee zoodles plus half an avocado with kale microgreens, topped with lots of organic feta. Salmon seasoned with smoked paprika, cayenne, lemon, raw honey, avocado oil and pepper broiled for 12 mins at 450.
