22.01.2022 Although Northern Italy depends on polenta more than pasta, there is one exception ‘Tortelli di Zucca’ which is a traditional stuffed pasta dish from Montova in Lombardy (Northern Italy). The pasta is shaped in a way that resembles ravioli, filled with the pumpkin puree and rich with egg, butter and cheese which creates a hearty, warming up dish perfect for the cold season . Each family has its own recipe for Tortelli di Zucca, but the essential element is freshly m...ade pasta (rolled out by hand!). With our vegetarian guests in mind, the Aperol Ski team designed a dish which is a twist on the Tortelli di Zucca a deconstructed raviolo with butternut squash, mascarpone, spinach and porcini mushrooms. 12.01.2022 Porcini mushrooms (‘little pigs/piglets’) are the most sought-after and appreciated wild mushrooms used in Italian cuisine due to their ability to add richness and depth of nutty flavour to risottos, soups or pasta dishes. Their high protein content makes them an excellent substitute for meat in vegetarian-friendly options. Porcini are considered a gourmet food because they are not easy to cultivate (they can only grow in proximity to pine, chestnut, hemlock and spruce due... to symbiosis and need to be picked by hand). The most famous areas that the mushrooms are sourced from are the forests covering the hills of Emilia-Romagna, Piedmont and Alto Adige (all situated in Northern ). Fun fact: the stem of the porcini mushroom resembles a champagne cork! Aperol Ski team incorporated them in our vegetarian option deconstructed butternut squash, spinach and mascarpone raviolo with porcini dressing. 11.01.2022 Grana Padano is D.O.P. (Protected Designation of Origin) certified hard cheese from north-eastern Italy (produced in Piedmont, Lombardy and Veneto regions ). ‘Grana’ can be translated as ‘grainy’ which refers to the texture of the cheese. The flavour changes as the cheese is aged the initial intensely sweet taste is replaced by more savoury and complex tones of roasted almonds and smooth, caramelised butter. The heritage of Grana Padano can be traced back to the 12th ce...ntury it was first produced by Cistercian monks of the Chiaravalle Abbey. If you are a fan of Parmigiano Reggiano but would like to try something new, Grana Padano should be on top of your bucket list!
