25.01.2022 Some would say when when you turn 40 everything falls apart Turning 40, has brought me TOGETHER. My outer shell is map of my history, my smile lines are there because Ive loved and cried, experienced good times and bad. I wear stretch marks from carrying two gifts (my precious children) created with my love, Brett. I wear scars of where I have learnt resilience and how to get back up when Ive been knocked down. The grey hairs are becoming more and more (well I have ...always wanted blond highlights). I need to focus that little bit more when sneezing or coughing and there is less flexibility and bounce available for fitness workouts, bedroom workouts and your general clowning around. On the inside Ive grown to love and accept myself as woman who has SO MUCH to give this world. I am a incredible woman who became a mother and a valuable, loving wife and friend. I am a loving sister to more sisters than just my blood sisters. I am a nurturer. I am a light giver to those who need it. I am efficient and hard working. I am creative and artistic, I am an inspiration, I am an ideas woman. I am an emotional being and I love whole heartedly and live with gratitude and compassion, in the present, right here, right now. 24.01.2022 My eyes were to big for my stomach for our Saturday night progressive dinner date, so naturally Sunday serves up my gluten free roasted vegetable dish. Slice, chop and S&P season and splash with balsamic vinegar and oven roast in olive oil a 1/4 pumpkin, 1x eggplant, 2x medium capsicum, 5x small tomatoes, 2x medium zucchini, 1x bulb of garlic until pumpkin is soft and others are cooked through. Boil pasta until soft. Combine and stir pasta through (the pumpkin should be soft... enough it act as a sauce). Stir in 2 x tablespoons of black olives, 1x can of champignons and 1 Tansle spoons of capers. So its funny how the table turns and I am now telling my Mum she needs to eat more lunge healing fruit and vegetables, just as she taught me as a child. So this is her dessert ... if it makes it through the night Made with love Lunge healing Apple & Black Berry w Walnut Crumble Filing - ... 6 Red Apples cored and chunked 1 cup Blackberrys 1/4 cup of honey 2 Tablespoons fresh grated ginger, yes I like ginger 1/4 water Place all ingredients in a saucepan and simmer until cooked down. Place in a shallow dish Crumble 1 Cup Walnuts chopped 1/4 Cup Golden Flaxseed Flour 2 Tablespoons butter 2 Tablespoons brown sugar Mix in a dry ingredients in a bowl, then rub butter through to make crumble. Spread over filling and refrigerate. Place in moderate oven to brown crumble only Deliciousness

20.01.2022 Now the days are getting shorter and the weather is a little cooler the meals are getting warmer. Butternut pumpkin soup so easy to make. Roast butternut pumpkin pieces in the oven. Brown an onion in a pan on the stove and add vegetable stock. Add roasted pumpkin pieces into stock and blend with a hand blender.... Add coconut milk to add a creaking consistency and salt and pepper to finish. The dippers on the side are gluten free short crust pastry, baked in the oven with olive oil and salt and pepper. You will need 2x medium cucumbers 2x medium tomatos 3 x medium slices of watermelon... 1/4 red onion Handful chopped parsley Handful of chopped mint 2-3 Tablespoons balsamic or white wine vinegar Salt & peper Slice cucumber and tomato Cut watermelon into small cubes Cut onion into small cubes Layer half of all ingredients cucumber, then tomato, then watermelon, onion, mint and parsley, add salt and pepper. Continue to layer the rest of the ingredients in same order but finish with sprinkling vinegar of your choice over the top Cover and refrigerate for later or get it into you now !!
