21.01.2022 Look out for our APPLE TREE CREEK HONEY FUDGE coming soon! Ingredients Makes: 16 pieces of fudge 115g butter 450g granulated sugar... 1 (397g) tin condensed milk 2 tablespoons APPLE TREE CREEK HONEY 140ml milk A pinch of cream of tartar Method Prep:5min Cook:20min Ready in:25min Line or grease an 18cm (7 inch) square tin. Heat all the ingredients together slowly until sugar has completely dissolved. Bring to the boil, stirring all the time, until it reaches 114 C or 240 F on a sugar thermometer (soft ball stage). Remove from heat and continue to beat until it thickens. Pour into tin. When it has cooled slightly, mark into squares. Set aside to cool completely. YOU ARE WELCOME :) See more

20.01.2022 HONEY PRAWNS (credit Australian Woman's Weekly) Ingredients 3/4 cup self-raising flour (gluten free flour works well) 1 teaspoon salt... 1/4 teaspoon white pepper 1 cup water 1 egg (we use CHILDERS FREE RANGE EGGS) oil, for deep-frying 1/2 cup cornflour 1 kilogram green prawns, peeled, deveined, tails intact 1/3 cup APPLE TREE CREEK HONEY 1 tablespoon oil (we use Grape Seed Oil) 1 tablespoon sesame seeds, toasted Method Honey prawns 1 Sift flour, salt and pepper together into a large bowl. In a jug, mix water and egg together. Gradually whisk into flour to form a smooth batter. 2 Heat oil in a deep saucepan on medium until a little batter sizzles as soon as it is added. 3 Place cornflour in a shallow dish. Lightly coat prawns in cornflour, shaking off excess. Dip prawns a few at a time into batter, draining off excess. Cook in 5 batches for 3-4 minutes. turning until golden. Transfer to a wire rack. 4 Combine honey and oil together in a frying pan. Stir on medium until combined. Add prawns, tossing until well coated. Sprinkle with sesame seeds. See more

It makes them pretty docile for European bees, so long as you don’t get in the way of the food or their hives!

10.01.2022 MONDAY NIGHT'S DINNER SORTED! SUCCULENT HONEY & LEMON CHICKEN Ingredients 3 juicy lemons 50g butter... 3 tbsp clear honey leaves from 4 rosemary sprigs 1 garlic clove , finely chopped 8 chicken pieces, such as thighs and drumsticks, with skin 750g potatoes , peeled and cut into smallish chunks green salad , to serve Method STEP 1 Preheat the oven to 200C/Gas 6/fan180C. Squeeze the juice from 2 lemons into a small pan and heat with the butter, honey, rosemary, garlic and salt and pepper, until the butter melts and it smells fragrant. STEP 2 Lay the chicken in a roasting tin don’t pile it up or it won’t cook so well. Add the potatoes and drizzle with lemon butter to coat evenly. Cut the third lemon into 8 wedges and tuck them in. (Can be made up to 2 hours ahead up to this point.) STEP 3 Roast for 50 minutes - 1 hour until the chicken is cooked and the potatoes are crisp and golden. Serve with a green salad.

05.01.2022 It’s bee swarming season don’t be alarmed bees are not aggressive when swarming. This is because they have no hive to protect, instead they are more interested in looking for a new home to colonise.
