21.01.2022 Arakai Estate, Artisan Tea Maker Brendon Collins is one of our hosts for our long table dinners in the paddock on 2nd March 2019. Are you a tea or coffee perso...n? I actually like both. I have cooked with coffee to make all sorts of dishes. But have you ever thought about how you could use tea in your cooking? I have an Irish Bread recipe that has a base of mixed fruit soaked over night in a strong black tea and brown sugar. The next day I just throw in the other ingredients, mix it all together and bake it. A great little recipe that is simple, easy and tastes good. If you would like a copy of the recipe send me an email at [email protected]. One Christmas dinner I used tea to smoke ribeye and it was great. So how else might you use tea in your cooking? What about using tea in place of a stock or poaching liquid? Tea can be used as a spice mix by sprinkling the finely chopped tea as you would a herb. Cook your grains with tea to add a hint of smokiness and depending on the type of tea it could give the grain a grassy green colour and flavour. Good for St Patrick's Day. Green tea is very beneficial because it contains loads of antioxidants. What better way to take in those antioxidants than having desert. Have you ever thought about green tea infused icecream or panna cotta? You just infuse the milk the same as you would a vanilla or lemon myrtle panna cotta. Mix Mint green tea in yoghurt (Greek of course) with other spices would make a lovely dip. Be adventurous! Try using tea in your cooking. You will be surprised at the results. Details are a bit light on so I dont know _which_ tea won it, but were delighted nonetheless :D Even better to hear that The Steepery took out Grand Champion Tea with an amazing entry from Fujian Province, China.... Winners all-round !!

17.01.2022 Drumroll please .... brbrbrbrbrbrbbrbrbrb CHA! It was our most recent Autumn Black tea that took out the 2018 Reserve Champion award at the Royal Hobart Fine Food Awards! This tea has also been awarded Bronze in the Australian Black Tea category, along with our 2016/17 Premium Black (a well established favourite!).... Topping this all off is another Bronze to our 2017/18 Spring Flush Green in the Australian Green Tea category. We're very proud of the results and also impressed with the obviously high standards of the tea judging - not one gold medal was awarded and only a handful got the points for silver. It's really great to see quality teas and tisanes being recognised more widely in Australia. Great work Australian tea community!

15.01.2022 Hello everyone, we hope youre keeping well (and sane!) Interesting times indeed and weve all probably never seen the insides of our homes and minds as much as we are at the moment. We understand a lot of people are struggling right now with isolation, money stress and overall worry about world events. Were certainly no different here, but life on the farm remains much the same - we have no choice but to keep things running as best we can, the grass keeps growing thats fo...r sure! We want you all to know that we are still in operation & still packing and sending orders while we can. We are also reducing prices on all tea lines to try and make it a bit easier on folks that are struggling. The intention is not to profit on crisis but we figure if youre stuck at home all day, you may as well be drinking good tea! It may just help the mood and feeling of well-being :) Well be shipping orders once a week for as long as we can! Weve also been practicing self-isolation... for about 11 years now ;) Weve always used high standards of hygiene when handling our tea but this has been stepped up even further. We wish you all the best. Its been withered & rolled and ready to start oxidisation, which happens rapidly (pic2- 2 hours later!). 04.01.2022 Day 2 of Spring #tea harvest - all stations are go! Were not feeling quite as fresh now were on day 4 but were very happy with the results. The #greentea is just lovely - fresh, sweet and aromatic. Our #blacktea is doing the first pass in the dryer right now and already has that lovely malty caramel smell. If we could bottle the smell of this wilting green leaf we would be set for life, its a joy every time we cut fresh leaf! #arakaiestate #artisantea #australiantea
