23.01.2022 Traffic jam! Here’s a busy hive with lots of comings and going’s feasting on the prolific early spring floral blooms. Bees collect pollen and you can see it gathered in saddle like packs on their rear legs. This can be seen in this photo as the bright yellow sacks on the bee in center frame. Pollen comes in many different colours depending on the plant or tree species. Bright yellow pollen like this is most likely from the neighbouring wattle trees in full bloom this time of year. European bees like these Italians will slow down in the winter conserving energy, patiently waiting for spring to emerge. This stems from the cold frozen European winters where they originate. Bees store honey in hives to get them through frozen winter. It’s ingrained in to the bees DNA, hoarding honey for a frozen winter where food just won’t be available. ... Honey is primarily made during the spring, summer, and early autumn floral blooms. For me It’s always very exciting when the bees start spring early. 08.01.2022 Busy week for us at A G honey. We harvested 420kg of some of our best honey to date. Plus we got all the bees set up and cozy for winter. And started an exciting new apiary in one of the most beautiful cottage gardens we have seen. What a great week.

It’s predominantly forage from the Sydney Angophora, with notes of lavender and other native and cottage flora. Having such a diverse flora really makes this honey sing.
