21.01.2022 THURSDAY TROUBLESHOOTING TIPS: Piping black macarons There’s something satisfying about watching this video, but I can’t exactly explain why? Until you’ve had BAD black batches (say that 10 times quickly) previously, words cannot explain !!! 13.01.2022 THURSDAY TROUBLESHOOTING TIPS: In my recipe I recommend baking 1 tray at a time due to most ovens (even my professional one )are not able to regulate the temperature between trays.. I think it’s to do with when you add a second tray, the oven increases the heat to try to regulate having 2 trays in there, so more likely to get cracked macs! I also think that putting a tray on top means it traps heat on the bottom tray, also causing it to be way hot and cracked ...so what to... do with the batter when the first tray is in there?? I leave it in the piping bag as I don’t like to rest my macarons for more than 5-10mins as it leaves them dull looking.
