23.01.2022 3 simple vegetarian side dish or main Serves 4 Ingredients Red capsicum, 1 capsicum(s), halved and seeded... Yellow capsicum, 1 average, halved and seeded Zucchini, 4 medium, finely sliced length ways Eggplant, 1 eggplant(s), finely sliced Olive oil, 1 tablespoon(s) Garlic, 1 clove(s), crushed Red onion, 2 medium, finely sliced Roma tomato, 4 tomato(s), diced Basil, cup(s), (1/2 cup) torn Ricotta cheese, reduced fat, 200 g Instructions Heat oven to 180 C. Place capsicums, skin-side up, in a baking dish and drizzle with a little olive oil. Roast for 20 minutes. Remove from oven, cover with foil and allow to cool slightly. Peel off and remove skin and slice flesh into thick strips. Preheat grill plate or barbecue grill to high. In a bowl, toss zucchini and eggplant with half the oil. Grill vegetables until soft. Heat remaining oil in a large non-stick frying pan over high heat. Add garlic and onion and saut until soft. Arrange vegetables, including tomato and basil, in layers in a non-stick baking dish, lightly seasoning every few layers. Crumble ricotta over the top and bake for 30 minutes. 20.01.2022 HEALTHY CREAMY VEGETABLE CURRY RECIPE Serves 4 Ingredients... olive or canola oil spray 1 large onion, diced 2 cloves garlic, crushed 1 tbs garam marsala 1 tsp turmeric 1 eggplant, cut into 2-3cm pieces 400 g sweet potato, peeled, cut into 2-3cm pieces 1/2 cauliflower, cut into florets 3/4 cup salt-reduced chicken or vegetable stock 150 g green beans, trimmed and cut into 5cm lengths 1 x 400g can no-added-salt chickpeas, drained and rinsed 400 g can coconut-flavoured evaporated skim milk 16 plain pappadums (8cm diameter), to serve 1/2 cup fresh coriander, chopped, to serve Method Spray a large non-stick saucepan with oil and place on medium to high heat. Cook onion for 3 minutes, stirring occasionally; add garlic and spices and stir 1 minute until fragrant. Add eggplant, sweet potato, cauliflower and stock to the pan, mix well. Bring to the boil then reduce heat to medium; simmer covered for 12 minutes until vegetables are just tender. Add beans, chickpeas and milk; increase heat to return to the boil. Reduce heat and simmer gently uncovered for 5 minutes until beans are tender but still bright green. Place 8 pappadums around the edge of a microwave-safe dinner plate and cook on HIGH (100%) for 60 seconds until puffed and crisp. Set aside and repeat with remaining pappadums. Serve curry in bowls topped with coriander and pappadums. Hint Add a teaspoon of coconut essence to a can of evaporated skim milk to replace coconut milk Variations To add heat, cook a chopped red chilli or teaspoon of chilli powder with spices. 13.01.2022 STAYING FIT WHILE STAYING AT HOME Although social distancing will come to an end, with winter fast approaching and the wet weather that comes with that, some of these suggestions may still be useful. Do you remember the excitement you felt as a child when you bounced on a trampoline, climbed trees or danced like no-one was watching in your lounge room? ... While adults often exercise because of the health benefits, children are active just because it feels good. Injecting some of that playful joy into your exercise routine might be just the thing you need to motivate you to do more of it. Very occasionally, people with very high blood pressure are at serious risk of problems and need urgent treatment in hospital to reduce the risk of a stroke or heart attack.... Current Australian guidelines recommend that if you have persistent raised blood pressure over 160/100, but are at low risk of having a stroke or heart attack, you should talk to your doctor or specialist about taking medication to lower your blood pressure. What is high blood pressure? Your blood pressure is high if the reading is higher than 140/90 mmHg, which is considered to put you at higher risk of having a heart attack or stroke (cardiovascular disease). That is, you have high blood pressure if the higher figure (systolic) is higher than 140, or the lower figure (diastolic) is higher than 90, or both. This is also known as hypertension. More than one third of Australians over the age of 18 have high blood pressure. If your blood pressure is below this figure, however, you are considered to have a reduced cardiovascular risk. 10.01.2022 Pumpkin and spinach frittata Serves 4 Ingredients Pumpkin, any type, 400 g, peeled and cut into 3 cm cubes... Olive oil, 1 tablespoon(s) Soy sauce, 1 teaspoon(s) Leek, 2 medium leek(s), finely sliced and washed Garlic, 2 clove(s), crushed Baby spinach, 300 g Black pepper, ground, 1 pinch(s) Eggs, raw, 8 60g egg(s) Natural yoghurt, low fat, 400 g Cheddar cheese, tasty, 50 g, grated Instructions Preheat oven to 170C (330F). Grease a small baking dish with a little oil. Place pumpkin in a bowl with 1 teaspoon oil and soy sauce and toss to coat. Tip pumpkin onto a baking tray and roast for 25 minutes. Heat remaining oil in a frying pan over medium heat. Add leek and cook for 5 minutes, or until soft. Add garlic and spinach leaves and cook until spinach has wilted. Tip mixture onto work surface and chop roughly. Season to taste with pepper. Whisk eggs, yoghurt and cheese together lightly in a large bowl. Add pumpkin and spinach mixture and gently stir to combine. Pour mixture into prepared dish and bake in oven for 20 minutes, or until set. Serve with a salad. 06.01.2022 Broccoli pesto pasta SERVES 4 Ingredients 400g penne, farfalle or conchiglie pasta... 250g broccoli , cut into florets 1 garlic clove, peeled 1 large lemon tsp dried chilli flakes 3 tbsp pine nuts 5 tbsp extra-virgin olive oil 3 tbsp parmesan (or vegetarian alternative), grated Method Tip the pasta into a large pan of boiling salted water and cook according to pack instructions. Meanwhile, bring a smaller pan of salted water to the boil, add the broccoli and boil for 4 minutes. Drain the broccoli and return it to the pan. Lightly mash the broccoli with a potato masher or fork. Finely grate the garlic and zest the lemon, then mix into the broccoli with the chilli flakes and pine nuts. Cut the lemon in half and keep for later. Drain the pasta and return it to the pan. Stir in the broccoli pesto and squeeze over the juice of 12 lemon. Pour in the olive oil and generously season with salt and pepper. Ingredients Curry paste, 2 tablespoon(s) Natural yogurt, low fat, 400 g Chicken breast, lean, raw, 800 g , trimmed, cut into strips Pita bread, wholemeal, 4 pita(s) Lime, 1 lime(s) , wedges, to serve Cherry tomato, 250 g , quartered Lebanese cucumber, 2 cucumber(s) , peeled and diced Red onion, 1 medium , finely diced Coriander, 3 tablespoon(s) leaves Lemon juice, 2 tablespoon(s) Instructions Combine the curry paste and half the yogurt in a large bowl. Add the chicken and mix to coat. Preheat a char grill or barbecue to medium. Grill the chicken, turning, for about 510 minutes or until browned and cooked through. Meanwhile, combine cherry tomatoes, cucumber, red onion, coriander leaves and lemon juice in a medium bowl and toss gently to combine. Place a quarter of the chicken strips on each flatbread and serve with the cherry tomato and cucumber salad, an extra dollop of yogurt and lime wedges. Tip: For a greater depth of flavour, coat the chicken in the yogurt mixture the night before and leave it to marinate in the fridge overnight.
