10.01.2022 Winter warming Mexican soup As it gets colder it’s perfect time for a warming comforting bowl of soup! So quick and easy and freezes too Serves 8 2sp ... 0sp0sp 1 medium pumpkin of your choice 1 tin tomatoes 1 tin kidney beans drained and rinsed 1 tbs Mexican spice 1 red onion Salt & pepper to taste 2 cups beef or vegetable stock 1 cup corn kernels Roast the pumpkin and red onion till cooked 200’ for approx 20 min Bring tin tomato & stock to simmer , add spice Add pumpkin and red onion and mash through the stock, I leave some of the pumpkin chunky to add texture Stir corn and kidney beans ** add Greek yoghurt and salsa, chilli , jalapeños coriander or spring onions ** If on you will need to add extra sp for your desired serve of Greek yoghurt #wwaunz #wwcoach #shelliesinspiredbyhealth #winterwarmers #comfortsoups #mexican
