21.01.2022 Brewing Tip Of The Day: Pay attention to the temperature of your brewing water! As with most things in the universe, the more heat you add to this process, the faster the reaction will be. A safe range is between 90 and 92 degrees Celsius. All desirable, soluble compounds will be extracted however any nasty, astringent flavours are kept to a minimum. As your temp approaches 100deg your coffee will become more and more bitter. If you regularly experience bitterness using your method, consider dropping the temp of the water you use...

18.01.2022 Coffee tip of the day: get an excellent grinder... Your grinder is arguably the most important piece of equipment you have when making coffee at home. This is for two main reasons. 1) you want to produce particles that are fine enough to create adequate resistance required for proper espresso while 2) not heating the coffee in the process and creating bitter flavours. Don’t neglect a good grinder in favour of a flashy espresso machine!!!
