25.01.2022 Author, Anthea from @rainbownourishments has morning tea sorted with an easy apple loafwhich would be perfect with a hot cup of chicory root coffee (no caffeine). Check our her feed for more colourful treats for your next tea time! EASY VEGAN APPLE LOAF Dry ingredients 2 1/3 cups plain flour*... 1/2 cup cane sugar, or coconut sugar 2 tsp baking powder 1 tsp ground cinnamon Pinch of any good-quality salt Wet ingredients 1 medium-sized apple, core-removed and grated roughly 1 cup plant-based milk, such as almond, soy or coconut, 1/3 cup light-tasting vegetable oil, such as sunflower or rapeseed 1 tbsp apple cider vinegar, optional Topping (optional) 1 medium-sized apple, core-removed and chopped into cubes 1-2 tbsp coconut sugar 1 cup coconut yoghurt or frosting of choice 1. Preheat the oven to 180C. Line a 20 cm loaf tin. 2. Add all the dry ingredients to a medium-size mixing bowl. Mix until there are no lumps. Add all of the wet ingredients to the bowl and mix until combined. Pour the cake batter into the tin. 3. Bake the loaf in the oven for 50 minutes or until a skewer can be inserted into the middle and there is no wet batter on it. The cake is very moist and there might be some crumbs on the skewer which is fine. 4. Allow the loaf to rest in the tin for at least 5 minutes. Remove it from the tin and allow it to cool on a wire rack. 5. To caramelise the apples: Add the apples and coconut sugar to a fry pan over medium heat. If the sugar sticks to the pan, add a dash of water. Fry until the apples are golden or your desired softness. 6. Dollop the coconut yoghurt and apples on top of the cake. Serve as desired. 7. The loaf can be stored in an airtight container without the topping at room temperature for 1 day. Alternatively, store the loaf with the topping in the fridge for 3 days or in the freezer up to 1 month. . * To make gluten-free, substitute with 1 1/2 cups almond meal and 1 cup white rice flour

Luckily, the dandelion is making a comeback, with a resurgence in natural cures and the resurrection of herbal medicine as a safer alternative to its pharmaceutical counterparts. Both the Dandelion leaf and root have been used for centuries in traditional medicine to treat liver, gall ...bladder, kidney ailments, weak digestion and rheumatism. They are also considered mildly laxative and the leaves have traditionally been used as a diuretic. Dandelion was first mentioned in Chinese herbalism as early as the 7th century, it was used by the Arabian physicians of the 10th and 11th centuries and in Europe it appears in texts from 1485. The name Dandelion, derives from the French dent-de-lion or lions tooth, describing the shape of the numerous yellow petals. The Dandelion is a tap rooted, perennial, herbaceous plant, native to temperate areas of the Northern Hemisphere, but grows vigorously throughout temperate to cooler areas of the world. 23.01.2022 This cooler makes for a delicious and easy drink to have in the afternoon - especially if youre trying to not have alcohol, but are looking for something to have at the end of a long day.... CALMING CHAMOMILE COOLER | Makes 1 Litre - Serves 4 6 tablespoons of organic chamomile flowers ... 800ml of just boiled hot water Small handful of ice for each serving glass 2-4 cinnamon quills, whole 1 teaspoon of whole allspice berries 1 green apple finely sliced 4-7 tablespoons of raw honey (to taste) 1. Infuse the chamomile, cinnamon and allspice in the 800ml of hot water for at least 15 minutes. 2. Once cooled, strain off the herbs and spices and dissolve the honey. 3. Add infusion to the serving glasses, pouring over the ice. Garnish with a sprig of fresh mint, apple slices, cinnamon quill and serve. See more



22.01.2022 A strong cup of roasted dandelion tea (some refer to this as a herbal coffee) needs a suitably rich treat to serve alongside! Why not try these @boskitchen Peanut Butter Blondies!! If you are avoiding peanuts, Im sure a sub of cashew or almond butter would suit! Peanut Butter Blondies... 1 cup cashews 1 cup almonds 1 cup pecans (or sub more almonds) 3 tbsp peanut butter 1 tsp vanilla 1 cup dates, pitted 1/2 tsp sea salt Frosting 1 cup dates, pitted 1/4 cup water 1/2 cup peanut butter 3 tbsp coconut oil Method 1. Prepare blondies by adding nuts to a food processor and blending until fine crumbs. Add in peanut butter, vanilla and dates and pulse until it forms a soft dough (it should stick together easily in your fingers). 2. Press into a small lined square tin and set aside in the fridge. 3. To make the frosting, soak dates in hot water for 10 minutes. Drain, then add to processor with water (can use the date soaking water), peanut butter and coconut oil. Pulse until smooth and creamy. 4. Spread on top of the blondies and pop in the freezer for at least 1hr. Slice into squares and sprinkle with a little salt before serving.

Balancing Tea Makes 3-4 serves... 1 tablespoon dried organic dong quai root 1 tablespoon of dried organic licorice root 1 tablespoon of dried organic ginger 1 teaspoon of dried organic cinnamon (lightly crush 1/4 cinnamon quill) I large piece of orange peel (make it easy with a vegetable peeler) 1 litre of cold water 4 tablespoons of raw organic honey 1. Place all ingredients in a saucepan and place over low heat; slowly bring to a boil. 2. Cover and simmer for 15 to 20 minutes. 3. Remove from heat and strain. Sweeten with honey if desired.

When coffee was introduced to Europe, the Dutch thought th...at chicory made a lively addition to the bean drink. Chicory has been used in many situations and countries throughout the years since including as a coffee substitute in American prisons, a coffee substitute during the great depression, world wars or coffee shortages. Over the years it has also been added to coffee to enhance the flavours in various recipes and ratios throughout France, Spain, Turkey, India, Syria, Lebanon, Palestine, South Africa, Germany and many parts of Asia. The entire plants if edible and has different uses. Chicory is a somewhat woody, perennial herbaceous plant of the dandelion family Asteraceae, usually with bright blue flowers and grows to up to a metre high. Many varieties are cultivated for salad leaves, chicons (blanched buds), or roots, which are baked, ground, and used as a coffee substitute and food additive. In the 21st century, inulin, an extract from chicory root, has been used in food manufacturing as a sweetener and source of dietary fibre. Some beer brewers use roasted chicory to add flavor to stouts (commonly expected to have a coffee-like flavor). Given the sun-like appearance of chamomile blossoms, which are typically yellow in the middle with ray-like white blossoms radiating outward, it should come as no surprise that the ancient Egyptians used it in offerings to the sun god Ra and burned it as incense. During the Middle Ages, E...uropeans used it as an air freshener and a cure-all for health ailments. Chamomiles restorative reputation persists to this day. To counter this, serve with a spoon of fresh honey and why not a sweet blueberry muffin? This week Im featuring a recipe by @themindfulhapa which would make a lovely snack or after dinner treat! *Blueberry Muffins*... Makes 12 2 large eggs (I used 2 flax eggs to make them vegan) cup maple syrup cup almond butter cup coconut oil, melted & cooled cup coconut sugar 1 tsp vanilla extract 2 cups super fine blanched almond flour cup oat flour 2 tsp baking powder tsp baking soda tsp salt cup fresh blueberries, with a few extra to place on top of batter 1. Preheat the oven to 350F and line a regular muffin tray with 12 muffin liners. 2. In a medium sized bowl, beat eggs. Whisk in maple syrup, almond butter, melted coconut oil, coconut sugar and vanilla extract. 3. In a separate small bowl, whisk together almond flour, oat flour, baking powder, baking soda and salt. 4. Blend dry ingredients into wet ingredients until combined. Do not overmix. Gently stir in blueberries until just combined. 5. Fill 12 lined muffin cups full with batter, and top with additional blueberries. 6. Move the muffin pan to the oven and bake at 350 deg. for 20 minutes, or until the tops are slightly browned and a knife inserted comes out clean. Enjoy!

15.01.2022 Cleavers can be taken as a tincture or tea, or used externally as a poultice, wash compress or in prepared products including salves, lotions and ointments. As a tea, 3 to 9 grams of the dried leaves can be steeped in a cup of water for five to 15 minutes and taken up to five times per day. While there are no known contraindications for cleavers, it is always best to check with your doctor or health care practitioner before taking herbs if you are pregnant, breast-feeding, taking pharmaceutical medications or have a serious or chronic illness.

15.01.2022 Many herbalists feel that cleavers is best infused into cold (or room temperature) water. This is not to say that preparing cleavers as a hot tea wouldnt be beneficial, but that the cold infusion would perhaps be more beneficial. Place 1-2 tablespoons of dried organic cleavers and 2 cups of room temperature water into a teapot. Allow to sit on the kitchen bench for 812 hours. Strain, add honey and enjoy. If you want a very strong infusion, you can place it in the fridge for up to 48 hours before straining and adding honey.

Raspberry Frangipane Tarts Recipe: 8 cm tart tin with removable bottom x 6... Ingredients: Crust: 60g brown rice flour 40g ground raw almonds 20g corn flour (cornstarch) Pinch of natural salt 2 Tbsp. (30ml) maple syrup 2 Tbsp. (30ml) vegetable oil Filling: 25g ground raw almonds 15g brown rice flour 1 tsp corn flour (cornstarch) 15g coconut sugar 10g vegetable oil 1 tsp plant-based milk 1/2 tsp almond extract 3 Tbsp. (45ml, 45g) aquafaba (liquid from a can of chickpeas (unsalted)) Toppings: Sliced almonds 18 fresh or frozen raspberries Method: 1. Preheat oven to 180C/360F 2. In a bowl, whisk all the dry ingredients for the crust. 3. Add the wet ingredients to the dry ingredient mixture. 4. Mix with your hands until well mixed. 5. Press the mixture against the sides and the bottom of the tart tins. Prick the bases with a fork. 6. Bake for about 10-12 minutes or until baked through. Cool them down. 7. In a bowl, whisk all the dry ingredients for the filling. Add oil, milk, and almond extract, and mix well. 8. In a different bowl, beat aquafaba with an electric mixer until glossy stiff peaks form. 9. Add a third of the aquafaba meringue to the mixture and mix well. Add another third of the aquafaba and mix lightly. Add the rest of the meringue and gently fold it in. 10. Divide between the tart cases, spread into an even layer. Place the raspberries and sliced almonds on each tops. 11. Bake for 20-25 minutes or until golden. Leave to cool for about 30 minutes. Remove from the tart tins. If you are following a Medical Medium protocol, make the following substitutions Instead of corn flour use tapioca or arrowroot starch. Use the best quality coconut oil you can find for the vegetable oil and if you are avoiding rice, use cassava flour instead of the brown rice flour.

Dandy Sun-Downer Tisane - Makes 1 litre - serves 4 800ml just boiled water 4 tablespoons organic dried roasted... dandelion root 1 tablespoon of fresh organic ginger root - finely grated 1 handful of fresh mint leaves Juice of 1 lemon plus another lemon sliced for garnish 1/2 teaspoon ground nutmeg 4 tablespoons of raw organic honey (or to taste) Infuse the dandelion roots in the just boiled water for at least 10 minutes - let cool to room temperature, then stir in the honey. Store in the fridge until ready to serve. When serving, place the dandelion root infusion in a 1 litre jug and stir in the grated fresh ginger, mint leaves, lemon juice and nutmeg.
