24.01.2022 WILD RICE CRANBERRY & APPLE SALAD | This is a perfect salad to serve family and friends over the festive season. Apples are rich in polyphenols that have potent antioxidant properties. Eating apples regularly has been shown to lower oxidized LDL bad cholesterol, which is linked to the development of atherosclerosis . Ingredients: 3/4 cup uncooked wild rice, rinsed... 4 cup water 1/3 cup sliced almonds, lightly toasted 3 Tbsp toasted pumpkin seeds 1/3 cup dried cranberries, roughly chopped Handful parsley, roughly chopped 1 green apple, diced 2 shallots, finely sliced 2 celery stalks, diced . Dressing: Zest and juice of a small organic orange 2 Tbsp cold pressed olive oil 2 Tbsp apple cider vinegar Pinch sea salt and pepper . Method: . In a small saucepan add water and rice and then bring to the boil. Reduce the heat and simmer covered for 50 minutes or until the rice is tender and fluffy and most of the grains have split. Set the rice aside to cool . In a jar add dressing ingredients and shake well . In a large bowl add wild rice, nuts, seeds, cranberries, parsley, apple, celery and shallots. Try a Tikka Masala Indian curry with green beans, potato, carrots, and sprouted organic tofu, served with cauliflower rice and gluten-free naan bread. Cauliflower rice is one of my favourite ways to get extra brassicas into my families diets. Brassicas contain sulfur compounds called glucosinolates that are important for liver detoxification and for cancer prevention. Chewing or cutting brassicas will activate this valuable compound. #nourishingfood

These mouthwatering gluten-free cupcakes are moist and chocolatey, you won't be able to resist going back for seconds. Beetroot is rich in antioxidants and beta-carotene, which protects cells in the body from oxidative damage and inflammation. Including antioxidant-rich foods like beetroot in the diet is one of the best ways to reduce the risk of chronic diseases like cancer an...d heart disease. Strawberries are another excellent source of free radical-neutralising antioxidants and vitamin C, both important for boosting immune health and for preventing infections and chronic disease. You will find this recipe and lots more on my @bodhiorganictea website . Ingredients: 1 cups almond meal cup raw cacao powder Pinch sea salt tsp baking soda 2 organic eggs 3 tbsp cold pressed coconut oil cup raw honey 1 tsp vanilla bean paste or essence 190g raw beetroot (around 1 medium beet), finely grated 1 large apple, peeled & grated cup diced strawberries . Method: Preheat oven to 180C. Place cupcake cases in tin cupcake tray or use a silicon cupcake tray. In a large bowl combine almond meal, salt, cacao, and baking soda. In a small bowl combine eggs, coconut oil, honey and vanilla. Pour egg mixture into your dry ingredients and mix until well combined. Stir through grated beetroot, apple and then fold through strawberry pieces. Pour mixture into cupcake cases and cook for around 50 mins, until skewer comes out cleanly from centre. Delicious served warm with a dollop of coconut yoghurt or cream. Makes 12 cupcakes . #wholesomecooking #glutenfreebakedgoods #bodhiorganictea. #healthybaking

07.01.2022 Veggie Bolognese A perfect plant-based winter meal full of protein and dietary fiber along with important nutrients like iron, zinc, magnesium and beta carotene. A family favourite in our house. Ingredients:... 2 medium carrots, diced 1 onions, finely chopped 1 stick celery, finely chopped 200g mixed mushrooms, finely chopped 4 garlic cloves, crushed 1 x 400g can diced tomatoes 1 cup vegetable stock cup of cooked lentils or 1 tin 3 Tbsp tomato paste 2 Tbsp balsamic vinegar Good pinch sea salt and pepper 1 tsp ground cumin Pinch chilli flakes 1 tsp smoked paprika Handful of chopped parsley Spaghetti (gluten-free or wholegrain) Grated parmesan to serve Method: In a large pan over medium heat saute onion in olive oil for 3 minutes. Add carrots, celery and mushrooms and cook for another 5 minutes. Stir through balsamic vinegar, garlic, tomatoes, vegetable stock, tomato paste, herbs, salt and pepper and lentils. Reduce to a simmer and cook with the lid on for 20 minutes. Add more vegetable stock if the sauce is too thick. Remove lid and cook for a further 5 minutes. Serve with spaghetti topped with grated parmesan and fresh basil. Serves 4.
