23.01.2022 #Vegan #Aussie meat pie Makes approx 8 single serve pies Ingredients:... 1 packet Lamyong Vegetarian Health Food Vegetarian Mushroom Nuggets, roughly chopped 1 onion, finely chopped 2 tsp vegan beef stock (eg. Massel brand) 4 tbsp tomato sauce 2 tbsp vegan Worcestershire sauce (eg. Spring Gully) 2 tbsp BBQ sauce 2 tbsp plain flour 1 tsp dried parsley Good pinch of salt and black pepper 2 cups water 2 packages of vegan-friendly puff pastry (or enough to cut out 8 pie bases and 8 pie lids), defrosted 1. Cook onion on low to medium heat in a large pan until soft and translucent. 2. Add in roughly chopped Lamyong Mushroom Nuggets. 3. Add in remaining ingredients, except flour, water and pastry, and mix well. 4. Sprinkle flour over mixture in the pan and then add in water and stir well. 5. Allow mixture to heat and thicken for approx 10-15 minutes. 6. Set mixture aside. 7. For the next steps, I used a pie maker, but if you don't have one, you will need to use individual pie dishes or ramekins lined with greasproof paper and preheat your oven to 180 degrees C. I would also recommend blind baking the bases if not using the pie maker. You can do this by laying greaseproof paper inside and around the base and filling with uncooked rice, dried beans or baking weights and bake for approx 10 to 15 minutes (once oven has reached temperature). 8. Cut out 8 large circles for the bottom of the pie and 8 smaller circles for the top of the pie from your puff pastry. You want the pastry to overlap so the lid can seal to the base. 9. Place larger circles of pastry into the base of your pie maker/dish. Scoop in filling to the top and then place smaller circle of pastry on top. If not using a pie maker, you will need to pinch the edges together to make the lid stick to the base and should also make a small cut in the lid to allow steam to escape. 10. If using pie maker, cook as per pie maker instructions. If using the oven, cook for 15 to 20 minutes or until pastry has browned. 11. Carefully remove from pie maker or dishes.
