10.01.2022 I am sure I have mentioned it before, I do not like wastage when it comes to food. I seem to have a gift when it comes to making something tasty out of the last veggie dregs. Making theses meals and salads fed us for dinner and me for lunch and emptied the fridge.... Sliced Cucumber with a mayonnaise and dill dressing Egg, cheese and mixed veggie bake with whatever I had left. Tomato, celery and garlic salad with vinaigrette. Leftover salad vegetable with meatballs from the freezer and mayonnaise dill dressing. Look at the colours and variety of food. Plenty of taste, nutrients, and pleasure

08.01.2022 Friday night cooking Egg plant Pizzas!!! Yum! Except for Ratatouille, no one loves eggplant in my family. However, these little pizzas were very tasty. They are a good alternative to get more veggies into my pizza crazy family and also perfect for anyone gluten free. ... Egg plant is actually quite tasteless and will take on the flavours of whatever you cook them with. I used 1 1.5cm thick slices of eggplant (I used the hole medium eggplant) Spread with either homemade pesto and/or pasta sauce (this one was store bought) and topped with mushroom, onion and tasty cheese. Baked in the oven at about 200C until they looked like in the picture. No idea who long, but I would think it was at least 10-15 min. Don’t they look Yummy? Enjoy!

02.01.2022 Lunch today I always have boiled eggs in the fridge. They are such a great nutritious and quick snack. There wasn’t much else in the fridge except for a packet of snow peas, celery and tomatoes from the pantry. ... I diced the celery and tomatoes and added apple cider vinegar, garlic, olive oil and salt and pepper to it and mixed well. Then I sauteed the snow peas in a little butter with my homemade chilli mix and salt so they still had a bite. It was simple yet delicious. What was on the menu for lunch at your place today?
