22.01.2022 Green Hulk Pancakes to start off our Saturday morning Gosh life is a little busier with 3 babes to love, so my posts have been a bit MIA, but how could I not share this super quick and easy nutritious blender pancake recipe!? 1/2 cup oats (use GF if needed) 2 ripe bananas... 2 eggs or chia eggs for vegan option 1/2 cup washed baby spinach leaves Blend oats for 10 seconds to make flour Add rest of ingredients and blend until smooth Pour the mix to desired size into a lightly oiled pan on med heat Flip when bubbles have appeared on top and cook for a further 2 mins Note these pancakes brown a little more than traditional pancakes but this doesn’t affect their taste at all ENJOY!!! 16.01.2022 It has been a looooong while since I’ve posted here, so hello Seeing as there’s been no travel or really eating out in the past few months I thought I’d continue my posts from our Christmas road trip How was that even 6 months ago!? This delicious meal was enjoyed at @smokedpaprikacafe in Bardon which we were lucky enough to find by googling on our way to visit friends for the night. This place was busy, but they were so friendly and happily organised us a table and a... high chair for the babe. Our coffee and our meals were so yum and little Mr coeliac was stoked with his eggs and toast! 16.01.2022 I love this post! How ridiculous that 95% of Australians don’t consume the recommended intake of fruits and veg! I’ve definitely been guilty of this at times, but now make a conscious effort to add more to my breakfast, lunch and dinner. Veggie sticks and dip for afternoon snacks or a juicy mandarin after dinner can help boost your nutrient intake for the day so simply! The kids always take raw veggies and fresh fruit to school/daycare and their yumboxes always come home empty. Let’s help them have a healthier lifestyle than our generation

10.01.2022 The first stop on our Christmas holiday adventure was celebrating my birthday with family at @thecollectivepalmbeach What a fabulous concept and if you’re on the Gold Coast be sure to check it out! 08.01.2022 RECIPE At Nutrition Breakfast Apple Crumble - gluten free with dairy free/vegan option... Apples: 5-6 apples (I used 2 Granny Smith and 3 red delicious as that’s what I had, but you can use any, it doesn’t have to be a combination) 1/2 cup of water - add more if mix becomes dry while cooking 1 tsp Cinnamon Crumble: 100gm butter or coconut oil (vegan option) it needs to be hard and cold to rub into mix so if your coconut oil is liquified, pop it into the fridge before you prep your apples. I/2 cup gluten free oats 1/2 cup gluten free plain flour 1/2 cup almond meal 1/2 cup desiccated or shredded coconut 1/4 cup slivered almonds, roughly chopped 1 tsp cinnamon Apple Method: Peel and chop apples into small cubes, about 1-2cm squares Place apples into small saucepan and sprinkle with cinnamon, then top with water Simmer on med heat until partly soft, about 8 mins Pour into baking dish or ramekins Crumble Method: Mix all dry ingredients in a bowl Dice butter into small cubes if using butter Add butter or coconut oil and rub through until it is fairly evenly combined in the mix Pour crumble on top of apples and bake at 180 degrees for 15-20 mins or until crumble has browned to your liking. Enjoy hot or cold with yoghurt of choice, for a quick and nourishing breakfast. You could also top with some fresh berries for an extra little serve of goodness. 06.01.2022 Recall: Brauer Teething Gel 20g Consumers and health professionals are advised that Brauer Natural Medicine, in consultation with the TGA, is recalling one batc...h of Brauer Teething Gel 20g due to bacterial contamination. Brauer Teething Gel is used to reduce the discomfort caused by teething in babies.The affected batch is 809057 with an expiry date of September 2020. This batch has been distributed to pharmacies, health food stores and sold via the internet since 24 October 2018. Testing has found that some samples from this batch have been contaminated with Burkholderia, a bacteria commonly found in soil, water and the general environment. They are capable of causing infections in healthy hosts, but particularly affect those with compromised immune systems. These bacteria can be also spread through person-to-person contact. The initial symptoms of Burkholderia infection may be a low-grade fever, potentially progressing to much more serious conditions, including pneumonia and other lung disorders. 05.01.2022 Quinoa, lentil, kale and sweet potato fritters by AT Nutrition Makes: 20 fritters... Ingredients: 1 cup cooked quinoa, any colour (follow directions on pack to cook) tin cooked brown lentils (or cook your own equivalent) bag/ 60gm fresh kale, washed and chopped cup roast sweet potato diced (great way to use up leftovers) brown onion, diced 1 clove or 1tsp garlic, crushed cup shaved parmesan cheese, loosely packed 2 eggs, whisked cup bread crumbs of choice (I make my own gluten free, see notes for how) tsp turmeric powder tsp paprika Salt & pepper to taste Method: Cook kale, garlic and onion on medium heat in non-stick pan with a splash of water, until soft and set aside to cool In large bowl, gently combine quinoa, lentils, kale mix, sweet potato, parmesan and spices Add whisked eggs, ensuring they are mixed well through With clean hands, shape 20 fritters by scooping up about cup of mix and gently squeezing between your hands before placing on a plate They should be about the size of an average mandarin in diameter If time permits, pop into refrigerator for half hour or more to allow fritters to hold their shape better Cook in a small amount of oil in non-stick pan on medium heat for about 4 mins on each side, or until crisp and browning. Enjoy with a simple tahini or relish sauce or serve with leftover veg or your favourite salad, you could even throw these on a burger, the options are many. Notes: Use the left over tin of lentils in a salad for dinner I like to pre-cook my onion for fritters, meatballs and rissoles as it takes the crunch out of them, but you don’t have to. To make GF bread crumbs, lightly toast then tear up a slice (end crust works well) of GF bread and blitz in food processer until fine. You can also simply grate the bread if you don’t have a food processor. You can make these ahead of time and place in the fridge in a container until ready to cook. 03.01.2022 Yesterday I baked some potato wedges inspired by the potatoes in my pantry starting to sprout and some sour cream which needed using up Here’s how I did it: Preheat oven to 200 fan forced Wash potatoes and remove any sprouts/spots Cut into wedges by firstly cutting in half lengthways, then segmenting... Use a pump-spray or silicon brush to oil a baking tray then lay out wedges flat on the tray and spray/brush the top sides with more oil (Don’t be afraid of the oil!) Sprinkle with seasoning, my fave is the no-nasties @mingleseasoning garlic and herb Bake for approx 20 mins, checking after 15 and if they have started to brown take out the tray and using tongs, flip the wedges over Bake for another 15-20 mins adjusting the temp down slightly if your oven is more efficient than mine When cooked remove the tray from the oven and sprinkle over some pink salt while wedges are cooling on the tray Enjoy with any combo of your fave condiments @allthehealthythings because my food photography leaves a lot to be desired #atnutrition #nutritionist #nutrition #nutritious #homemade #bakeathome #fakeaway #wedges #potatowedges #nourish #flourish #flourishfoods #feedingfamilies #covid19 #isolationfood #cairns #cairnsfood #simpleyum See more
03.01.2022 Corn fritter recipe 1 cup SR flour (I used gluten free) 2 eggs 1/3 cup milk of choice (I used full fat)... 1 can creamed corn 1/2 can corn kernels 100gm crumbled feta 2 chopped spring onions *i also threw in about a tablespoon of diced red onion which was leftover from making the salsa Salsa: 1 small avocado diced 1 Roma tomato diced Rest of the can of corn 1 Tbsp of finely diced Spanish onion Squeeze of lemon or lime juice 1 Tbsp sliced mint leaves (and/or parsley, coriander...) To make the fritters: Whisk eggs in a large jug then add milk, both corns, spring onions and feta and mix to combine. Pour flour into a large bowl, making a well in the centre. Pour in the wet mix gradually, stirring until only just combined, avoid over mixing. Pour 1/4 cup of mixture onto a medium pan, cooking for 3-4 mins each side or until bubbling on top and golden underneath. Cook in batches until all the batter is used. Serve topped with salsa and enjoy. You could add any side you like to these, the options are endless. 02.01.2022 Vegetarian lasagne recipe ~ make it tonight for meat-free Monday These measurements are super rough because I was being quite hasty and just slicing enough pumpkin as I needed for each layer... And this is why I can’t write a cookbook... Speed was definitely the aim of the game so you could expand on this recipe to your own desires... After this went into the oven I thought about the fact that it was missing any kind of tomato layer, and I worried what it would taste like, b...ut it was honestly yum! Even hubby approved and had seconds!! White sauce: I made 3 cups for 2 lasagnes, my dishes serve 6 large slices. 1Tbsp butter and 1Tbsp plain flour (I use gluten free) for every cup of milk used. Melt butter in saucepan on medium heat and once melted add flour and whisk to combine. Add milk half a cup at a time, stirring continuously until all milk is added and sauce has thickened. Creating the lasagne: 2 medium zucchini’s sliced lengthways about 5mm thick. About 500gm jap pumpkin cut into 5mm slices Bag of mixed baby leaf spinach and Kale, washed and sautéed in water and garlic until soft but not completely cooked. Lasagne sheets (I used gluten free) Grated Colby cheese -1 cup Layer pumpkin, zucchini then spinach/kale mix in lasagne dish, sprinkle with sat and pepper and a splash of mixed herbs, top with lasagne sheet. Pour over a generous layer of white sauce and repeat layer process. Top second layer with grated cheese and bake for 45 mins or until pasta and pumpkin are cooked through.
