23.01.2022 The Clare Valley Festival of the Lamb Education Workshop for chefs, butchers and producers brought together a group of people, in collaboration with the Waterv...ale Hotel, who were hungry for knowledge. Chef Outta Water guest chef from Townsville's A Touch of Salt Michael Brine spoke about the importance of respecting the produce. Michael Brine commented that part of this respect is ensuring there's no wastage and shared some great ideas for using lamb offcuts. Bringing people together to share industry knowledge is an important part of the festival, and a rare opportunity for producers and butchers to see their produce at the end of the supply chain. #clarevalleyfestivalofthelamb #hosted

18.01.2022 Michael is heading down to South Australia with Chef Outta Water to the Inaugural Clare Valley Festival of the Lamb. He will be based in the quaint historic Town of Mintaro and working at Watervale Hotel. We wish him the best of luck in such a beautiful part of Australia, and look forward to him bringing a little of the Clare home! 03.01.2022 Chef Michael Brine will be the guest chef for this years Clare Valley Festival of the Lamb 16-22 September. Michael has lead chef exchanges in South Korea and b...een a Chef Outta Water Associate with delegations to China and the USA. He will be at the newly renovated Watervale Hotel for 3 days and is looking forward to the chance to feature his skills alongside great Clare Valley Chefs and to feature the local lamb and other produce.
