21.01.2022 My lovely neighbour gave me some massive zucchini so I bought some haloumi, a few eggs and seasoning makes for some delish fritters. Recipe from Nadia Lim. They are light and fresh. No flour means no stodginess I may have eaten my dinners worth while cooking them.

17.01.2022 A little meal prep baking going on today. I live in the hard to feed box, over the last few years I've developed intolerances to gluten, a lot of gluten free premade products and don't do well with dairy. I mainly live on meat and veg with some rice, nuts and decafe coffee with loads of jasmine tea! To try and avoid the endless cycle of breakfast blues I've made some gluten free baked oatmeal. I seem to tolerate these oats pretty well, so I've got an apple and almond one and a carrot cake one that I will smother with coconut or almond yoghurt. I've also made an apple pie style blonde, a berry crumble bar and in the oven I've got a pecan choc chip blonde that smells really delicious.

15.01.2022 Simple 5 minute holiday lunch. Baked beans mixed with Nutra Organics vital veggie powder and grated tasted cheese in a roti cooked in the pie maker. Simple and effective.



14.01.2022 Something to read as you contemplate next years lunchbox

13.01.2022 Today's lunchboxes, these cute little boxes came from Big W, they're frozen and minecraft, two very happy munchkins here . Anyway, to the food, a wrap for little with a ham and cheese scroll, cookie and twiggy, tomato and cheese. Big has a half eaten wrap from yesterday, we try to not waste food and he was happy to take it today. He has the same as little but a bit bigger scroll. Both also have a tub of fruit and a yoghurt pouch. This is pretty much what they take every day. The dessert changes, but not much else. Reliability and no surprises makes it much easier for kids to feel comfortable with their food. Encourages great relationships with food and gets a variety of foods in their bodies.

11.01.2022 Back to school tomorrow for myself and the munchkins, so in the interest of sanity and loosely disguised as organisation, I have prepared the next 3 days worth of snacks. I've made up fruit salad boxes, dessert options and twiggies, tomato and cheese that I'll add crackers to each day. Then it will be their wrap, sandwich, sushi or leftovers and their other snack such as a scroll or pizza slice. If I'm lucky, I may be able to keep this up every week, well one can dream

10.01.2022 Its that time of year again. Making recipes handed down from generation to generation is a fabulous way to keep those we've loved and lost in our hearts. I don't think Nan would disapprove of the tweaks I need to make so I can now enjoy it. This year I will use spelt flour as it has a different gluten content to regular wheat and I'm not confident enough to try to make it with other alternatives. Not all gluten free alternatives are equal.

09.01.2022 Sunday lamb roast. Nothing better! I've been working on the gluten free gravy lately, this one is definitely the best so far. Equal amounts of rice flour and glutinous rice flour.

08.01.2022 Last nights meatloaf became today's burger bagel. Loded with loads of veg and slapped on a bagel, the munchkins are very happy to have a burger lunch.

06.01.2022 Its my big boys 9th birthday today and he is having a friend over for a play. Apple, oat and rye flour pikelets and iced fruit tea. Simple, not too much of an overload before dinner and full of wholesome ingredients.

04.01.2022 Breakfast this morning for me. Almond flour waffles topped with maple baked pecans, coconut yoghurt with fresh raspberries. Gluten and dairy free and delicious.
