24.01.2022 | MEAT FREE DIN DINS | Love meals like this because it’s done in 20. It’s gluten free spaghetti with a pesto green vege sauce. 1. I chopped about two cups of raw broccoli into teeny bite size pieces. Pan fried in olive oil and added 3 crushed garlic. Then 1/4 cup of pine nuts turned heat to low. ... 2. Dropped in 1/2 a cup of frozen green peas. Seasoned with S&P. Stirred. Made sure peas were cooked. 3. For sauce, poured in 1cup or so of coconut cream and the last of my homemade pesto 1/4C. Kept stirring. 4. Finally added a generous handful of spinach and once it had wilted added the cooked Gf spaghetti and stirred till warm. 5. Served in bowls with pecorino parmesan. YUM. 23.01.2022 | PINE CUC COCO SMOOTHIE | Whipping up another food smoothie for my friend in hospital. The last one was enjoyed a beetroot, banana yogurt mix. This time I’ve gone for something even lighter and super hydrating. Freshly chopped pineapple, cucumbers and coconut water. This will be lovely sipped through the day to keep hydration up, it’s sweet so that always cheers you up and choc full of vitamin C. ... This combo would be great to make in the weekend. You can thin it out by adding more coconut water or make into ice blocks. Great idea now summer is here. Have a great weekend. 21.01.2022 Green Broccoli, Asparagus + Avocado Salad. Now the weather is heating up salads are taking more of a centre stage on our plates. Salads can be ooh so boring but this one won’t disappoint, unless you’re not a lover of broccoli, asparagus & avocado . The recipe requires you to blanche the veges, this stops the over cooking and you’re left with a cooked but not raw vibe. I love blanching. ... Cooked but with the crunch. So to give this a go, follow these instructions: 1.) Fill a kettle and boil. 2.) You’ll need 2 bunches of broccolini, ends off and cut in half. 3.) 1 bunch of asparagus, ends off and cut in half. 4.) Place veges into a bowl, the kettle would’ve boiled by now. Pour water over veges and leave for 3mins then run under cold water. Leave in cold water. This stops the veges from continuing to cook. 5.) Chop 2 avocados into chunks, squeeze lemon juice and S&P over. 6.) Drain water from veges in colander. 7.) Place veges on a platter & avo on the top. Drizzle in lemon olive oil or just plain olive oil and season S&P. This is such a hearty salad and would go nicely with a piece of baked fish, chicken or for a light and meat free dinner a few boiled eggs over the top. Let me know what you think and if you make any changes? Some chopped roasted almonds would be yummy over the top too. Would be perfect for lunch boxes too as the veges won’t go soggy. 20.01.2022 | MARINATING TOFU | Tofu doesn’t have much flavour so marinating it before hand then pan frying is how I do it. I’ve got some lovely Thai basil in the garden so will add that, coconut milk , vegetables and not sure about the rest yet . In the marinate is Tamari, coconut aminos and fresh grated ginger. 18.01.2022 | DISH JUST GETS BETTER | I’ve made this chicken curry 3 weeks in a row. Oooh my it’s just amazeballs. Today I added a chopped egg plant and bok Choy at the end. I chopped eggplant then fried with oil and salt. Then added to curry once all spices/chicken was added. It just dissolves, except for the skin and helps thicken the sauce. ... Check all these spices: Fresh galangal, turmeric, garlic, chillies, cumin, coriander, pepper, nutmeg, fish sauce, lime leaves, lemongrass stalks & lime. Seriously it’s da best. 18.01.2022 | ROASTED VEGES | Such an easy dinner, wash, chop, drizzle and spice up. Tonight I drizzled in olive oil, garlic powder, S+P and madras curry powder. Not a hot oven 200deg for about 40 minutes. Serving with fillet steak which I have also seasoned with S+P + garlic powder + a little olive oil. 06.01.2022 |MINI MOMENTS OF REST| I’m a big believer in taking time out through the day to rest. Not go to sleep although you might want too . Just removing yourself from where you’re at and take a different view in. Walk around the block, go get a glass of water and finish half of it, chat to a colleague. ... Even if you’re busy it does help. Don’t get stuck into the trap of I’m so busy, it’s definitely an over rated place. Just practise being present, organised and tick things off one by one. 05.01.2022 |HOMEMADE PESTO n PASTA | My basil is thriving and I wasn’t in the mood to make the dinner I had planned so decided on a carb fueled pesto dinner instead. 1 you’ll need 2 cups of fresh basil leaves, 3 crushed garlic, 1/4C parmesan cheese, 1/4C of toasted pine nuts, 1/2C olive oil. ... 2 Blend pinenuts and garlic in blender. 3 then add rest of ingredients. 4 I added in a small handful of blanched kale I had in the fridge ( handy tip ) 5 blend till smooth. Do a taste test and adjust sometimes it needs more parmesan, or if dry add a bit more olive oil. 6 store leftovers in a glass jar with lid. And pour extra olive oil over the top to stop from spoiling. Makes about 1 cup. I served with gluten free spaghetti, lemon juice, extra parmesan and a glass of red. Perfecto. 03.01.2022 | STRAWBERRY PILE UP | Here’s my Tuesday tip. Now summer is practically knocking on our doorstep stock up cheap fruit to pop in the freezer for homemade smoothies, slushies & quickie ice creams. I spotted strawberries on special at my local fruit shop so bought up, washed, chopped the ends off and into the freezer. ... I do an amazing smoothie with: ~ 1/2 a banana, ~ 1/4 of a beetroot, ~ 1C strawberries ~ 1/2 a zucchini ~ Coconut yogurt ~ Chia seed gel ~ 1Tbsp of green banana flour (resistant starch great for feeding belly bugs) ~ Dash of date paste ~ Protein powder ~ 3/4 of coconut water or water. Yummo The colour is amazing, fruit ticked off for the day, and nearly 2 serves of veges.
