07.01.2022 Two absolutely stunning new release from @futuremountainbeer Dark Eyes - Amber Sour beer aged in oak barrels with Yarra Valley Blackberries 5.8% Chance or Circumstance - Brown Sour beer aged in oak barrels with Date and Wattleseed. The brainchild of a formidable trio in the brewing world @futuremountainbeer X @mollyrosebrewing X @sailorsgravebrewing We began with a brown base wort, and added Portarlington mussel shells into the kettle. From there, we pumped the cooled wor...t into our open fermenter, where a blend of two Saison yeast strains, carrot flowers and orange zest rolled around together to get fermentation underway. After a few days, the beer was then racked into barrique oak barrels, and a mixed culture from each brewery was then added to separate barrels for further fermentation and maturation. To top it off, dates and wattle seeds were added to one of the barriques. After ten months of barrel maturation we blended from the barrels and bottle conditioned for a further eight weeks.
