18.01.2022 CHILLI CRAB RECIPE 2 tlbs sweet chilli sauce 2tsp oil 2 tlbs dry sherry 4 green blue swimmer crabs 1 tlbs brown sugar 2 garlic cloves crushed 6 green shallots thinley sliced... 2 fresh long chilli 1 tlbs grated ginger 1/2 cup chopped corianda 60ml (1/4 cup) tomato sauce Jasmine rice Clean crabs and cut body into 1/4s heat oil in a large wok high heat until just smoking. Add crab and stir fry for 5-7 minutes or until just cooked. Add garlic, chilli and ginger, and stir-fry for 1 minute or until fragrant. Add tomato and sweet chilli sauces, sherry and sugar, stir-fry for 2-3 minutes or until sauce boils and thickens slightly. Remove from heat. Add shallots and stir until wilted. Add coriander and toss until combined. Spoon Steamed rice among bowls. Top with chilli crab and serve immediately
18.01.2022 To my customers in Boonah , Rosewood, Peaks Crossing, and Kalbar. I was in and accident this morning and my Ute is totalled as you can see by pictures so no seafood for this week. I only got a klm from home this morning when this happened. I am the luckiest of people I have walked away with only bruising . I'll be back next week as we have a spare cold room trailer with our fresh seafood. SEE you next week Cheers Chris
18.01.2022 SPAGHETTI MARINARA WITH CRAB 4 uncooked blue swimmer crabs. 400g can diced tomatoes 1 tlbs oil 1/2 cup chopped flat leaf parsley 1 med brown onion chopped 1 lt water 1 clove garlic crushed 500g spaghetti... 1 red long chilli chopped finely 1/2 cup chop flat leaf parsley Clean crabs remove back shell, gills etc and wash crabs. Cut body into 1/4s Heat oil in large saucepan, cook onion, garlic, chilli, stirring until onion softens. Add can of tomatoes, crab and parsley, cook, covered, stirring occasionally until crab changes colour. Add the water to pan, bring to boil. Stand uncooked pasta upright in mixture until bottom half is soft enough to bend without breaking, then stir it into crab mixture, stirring regulary so it cooks evenly. Boil uncovered until tender and sauce thickens or 10 minutes Serve in bowls and sprinkle with parsley.

My version of Sweet chili Blue Swimmer crabs recipe I put up last week. I served mine with fried rice with headless king prawns. This recipe is absolutly delish and finger licking good. I'll be making it again shortly.
