04.01.2022 You asked and we've delivered! After receiving requests for a classic rice porridge recipe made using camel milk, we retreated to the kitchen and whipped up this little ripper. It tastes great on its own or with a few cherries on top. You can even add some slivered almonds for extra texture and a bit of crunch.... : https://www.instagram.com/laurastrobech/ RICE PORRIDGE (Basic Recipe) Ingredients 200g arborio rice 1 litre Good Earth Dairy Camel Milk 1 teaspoon vanilla paste 1/2 teaspoon ground cinnamon 70g caster sugar Sprinkle cinnamon sugar Dollop butter Method 1. Put 200g of arborio rice and 1 litre of Good Earth Dairy camel milk in heavy-based saucepan and bring to the boil, stirring occasionally with a wooden spoon. 2. As soon as it comes to the boil, turn the heat down to the next lowest setting on your stove and add 1 teaspoon of vanilla paste, 1/2 teaspoon of cinnamon and 70 g of caster sugar. Then stir until all the ingredients are incorporated. 3. Put a lid on the saucepan and let it simmer 40 - 50 minutes, with regular stirring until the liquid is almost evaporated and a nice creamy consistency is achieved. 4. Divide into bowls and serve warm sprinkled with cinnamon sugar and a dollop off butter. ------------------------------------------------------------------------------- CREAMY CHERRY & ALMOND SUMMER PORRIDGE Ingredients As per the Basic Recipe above plus: 100g slivered almonds 400ml whipping cream 1 tablespoon caster sugar Method 1. Take the warm porridge made in the Basic Recipe and stir 100g of slivered almonds through it. 2. Let the mixture cool completely. 3. Whip 400 ml of whipping cream with 1 tablespoon of caster sugar until thick peaks form. 4. Fold the whipped cream into the rice mixture. 5. Chill until ready to serve. Serve with warm cherry sauce (see recipe below). CHERRY SAUCE Ingredients 400g pitted cherries (they can be fresh, frozen or in a jar) 150ml water 150ml freshly squeezed orange juice 1/2 teaspoon vanilla paste 65g caster sugar 1 tablespoon cornflour Note: If using cherries from a jar, drain them before use Method 1. Stir water, freshly squeezed orange juice, vanilla paste and caster sugar together in a saucepan and simmer for a few minutes. 2. Add the cherries and simmer for an additional 10 minutes. 3. Mix cornstarch with a little extra water and add to the mixture. 4. Boil until the sauce thickens to the desired consistency. Serves 6-8
