07.01.2022 This Friday the NSW Department of Primary Industries will be holding a webinar to present the findings from their recent AMPC-funded review of total volatile basic nitrogen (TVB-N) and its application to determine whether meat is fresh or spoilt. Currently, the broad adoption of TVB-N to interpret meat freshness is somewhat restricted, due to limited or inconsistent knowledge pertaining to the association between TVB-N and other freshness parameters. There is a range of diff...erent recommendations for TVB-N to indicate meat freshness these are sometimes species specific and therefore cannot be applied to other meat types.
