Baijiu (pronounced bye-joe) translates to "white spirits" and is the national drink of China consumed on special occasions and holidays. Baijiu is the largest spirit category in the world, by volume. In fact, in 2018, more baijiu was consumed in China then the collective amount of whiskey, vodka and rum consumed worldwide (IWSR data). Yet, in non-Asian countries, it is litt...le known. #Baijiu is a rather broad category with 4 distinct styles - rice aroma, light aroma, strong aroma and sauce aroma.
