Check out the full recipe below by @nourishwithliv INGREDIENTS: Base: 1 1/4 cups oat flour (can easily blend up oats if you do not have oat flour on hand)... 1 cup rolled oats 1 cup chopped walnuts 1/4 cup melted coconut oil 1/4 cup pure maple syrup 1/2 tsp vanilla extract pinch of salt Blueberry layer: 1 1/4 cups fresh Australian blueberries 1/4 cup shredded coconut 2 tbsp yoghurt of your choice 1 tbsp pure maple syrup METHOD: Mix together all of the base ingredients until well combined. Set aside 2 tbsp of the base to sprinkle on top, and then press down the rest firmly into a pan and place in the freezer. In the meantime, prepare the blueberry layer by placing all ingredients into a blender/food processor and blend until smooth. Spread evenly on top of the base and then sprinkle with the extra oat crumble. Place in the freezer to set for a couple hours, then cut up and enjoy! Store in the freezer.

23.01.2022 BLUEBERRIES + CHOCOLATE = MAGIC You can make these delicious blueberry brownies comfortably at home for the whole family to enjoy! @wholesomepatisserie INGREDIENTS: 2 cups fresh Australian blueberries, divided... 1/2 cup butter 1/4 cup mini semi-sweet chocolate chips 1 1/2 cups granulated sugar 2 eggs, room temperature 2 tsp vanilla extract 1/2 cup cocoa powder 1 cup all-purpose flour 1/2 tsp salt METHOD: 1. Preheat oven to 180C and prepare your 9x9 inch pan. 2. In a saucepan, add butter and all but 1/4 cup of blueberries and simmer over low heat until butter is melted. Remove from heat and add in mini chocolate chips. Stir until melted. 3. In a separate bowl, mix eggs, sugar, and vanilla. Add a spoonful of the blueberry mixture to the egg mixture to temper it. 4. Add your tempered egg mixture to the saucepan of blueberries and mix well. 5. Add in cocoa, flour, and salt and mix until just combined. 6. Sprinkle the reserved 1/4 cup of blueberries on top of the batter. (Optional: Add flour to the blueberries before sprinkling on the batter.) 7. Bake for 25-35 minutes, until a toothpick comes out with minimal crumb. If you want the center to be gooey and to have a fudge-like consistency, try to not over bake.

23.01.2022 If you love baking then you simply MUST try this Blueberry Bread recipe by @servingupsimplicity INGREDIENTS: 1/3 cup maple syrup 1/3 cup coconut sugar... 1/2 cup coconut milk (or milk of choice) 1/3 cup coconut oil, melted 2 eggs 1 tsp vanilla 1 1/4 cup almond flour 1 1/4 cup oat flour 1/2 tsp baking soda 1/2 tsp baking powder 1/8 tsp salt 1 cup fresh Australian blueberries METHOD: 1. Preheat the oven to 180C. Spray a loaf pan with non-stick cooking spray or line with parchment paper and set aside. 2. In a medium bowl whisk together the maple syrup, coconut sugar, milk, coconut oil, eggs, and vanilla until smooth. 3. In a large bowl mix together the almond flour, oat flour, baking soda, baking powder, and salt. Pour the wet ingredients into the dry and stir to combine. Fold in the blueberries. 4. Pour the batter into the prepared loaf pan and bake for 15 minutes. Reduce the heat to 160C and bake for an additional 25-30 minutes or until toothpick comes out clean.

Thanks for the tasty, guilt-free recipe The Big Mans World INGREDIENTS: 2 1/2 cups self-rising flour 1/2 cup pure maple syrup (can sub for agave nectar)... 1/4 cup coconut oil 1 cup milk of choice 1/4 cup Australian blueberries 2 cups sugar free powdered sugar 1 tsp vanilla extract 1-2 tbsp milk of choice METHOD: 1. Preheat the oven to 180C/350F. Coat a 12-count donut pan with cooking spray and set aside. 2. Sift your flour into a large mixing bowl. Add the rest of the ingredients, except the blueberries, and mix until a thick dough remains. Fold through the blueberries. 3. Pour the donut batter into a large ziplock bag. Cut off one corner of the bag and pipe out the donut batter into the donut pan. Lightly wet your hands and shape into the donut cavities. Do not overfill. 4. Bake for 12-15 minutes, or until just done, and a skewer comes out just clean. Allow cooling in the pan for 5 minutes, before transferring to a wire rack to cool completely. 5. Once cool, spread each donut in the sugar-free glaze.

21.01.2022 Hands up if you want to try this magical Lemon Blueberry Sheet Cake This magical recipe is by Rainbow Nourishments and heres the recipe for you to try yourself! INGREDIENTS... Dry cake ingredients 2 1/4 cups white rice flour, or all purpose flour 2 1/4 cups blanched almond meal 2 cups sugar or coconut sugar 3 tsp baking powder Wet cake ingredients 1 3/4 cups plant-based milk 1 cup light-tasting vegetable oil 2 medium-size lemons, juice and zest 2 tsp vanilla extract Pinch of any good-quality salt 1 cup Australian blueberries Two-toned Blueberry Cashew Frosting 1 1/2 cup Australian blueberries 1 1/2 cup raw cashews 3/4 cup canned coconut cream 1/4 cup sweetener or sugar, of choice METHOD:. 1. Preheat the oven to 180C. Line a rectangular cake tin with baking paper. 2. In a large bowl, mix all the dry ingredients. Add all of the wet ingredients except the blueberries and mix until smooth. 3. Pour the cake batter into the lined baking tin. Scatter blueberries over and press them into the cake batter. 4. Bake the cake for around 25 minutes. Allow the cake to rest in the cake tin. 5. To make the two-toned frosting, add the blueberries to a small saucepan. Boil for 15 minutes and mash them with the back of a fork. Boil until the blueberries have softened and their juice has thickened. 6. Add 1/4 of the Australian blueberries to a blender with the rest of the frosting ingredients. Blend until smooth. 7. Pour out 1/2 of the frosting into a bowl. Add the remaining blueberries to the blender and blend until extremely smooth. Set aside both frostings in the fridge to chill. 8. To decorate: When the sheet cake has completely cooled, dollop both frostings on top of the cake. Use the back of a spoon to marble the frostings and to spread it on the cakes surface. Avoid over-mixing the frosting to ensure the the colour of each frosting is still noticeable. Enjoy!

Pinch of salt 3/4 cup milk of choice 1 large egg 1 tsp pure vanilla extract 1/4 cup plain Greek yogurt 1 tsp cinnamon (optional) Coconut oil for cooking Toppings: 1 cup Australian blueberries 1 tbsp pure maple syrup Squeeze of half lemon 1 tsp pure vanilla extract METHOD: 1. Mix all the dry ingredients in a bowl. In a larger bowl, whisk the wet ingredients. 2. Slowly pour the dry into the wet and gently mix until no big lumps are left. Do not overmix or you will have dense pancakes. 3. Heat a griddle or non-stick pan with a bit of coconut oil or butter. Scoop the batter using a ladle to form medium-sizes pancakes. 4. Once bubbles appear (about 2-3 minutes or so), gently flip the pancakes. 5. To prep the topping, combine the blueberries, maple, vanilla and lemon juice in a saucepan and simmer until blueberries are bubbly. Transfer to a bowl and top on pancakes and enjoy!

This blueberry and lemon curd loaf by Panaceas pantry is a must-try INGREDIENTS: 3 cups plain flour 3 tsp baking powder... 1 tsp salt 1 tbsp lemon zest 3/4 cup thick yoghurt 3/4 cup milk of your choice 2 tsp vanilla extract 1 cup castor sugar 1/2 cup grapeseed oil 1/4 cup lemon juice 1 cup fresh Australian blueberries METHOD: 1. Preheat oven to 170C, and grease and line a large tin loaf. Set aside. 2. In a medium mixing bowl, add all wet ingredients (listed from yoghurt down to lemon juice) and whisk together well. 3. In a large mixing bowl, sift in flour and baking powder. Add salt and lemon zest, and combine. Pour the wet ingredients into the bowl, and gently incorporate until just mixed together (the batter should be smooth). Add Australian blueberries, and gently fold through. Pour into prepared pan, then bake between 1 hour and 1 hour 10 mins. For my oven, 1 hour and 5 minutes is perfect. 4. Allow cake to cool for 5 minutes before gently removing and cooling completely on a wire rack. At this stage, your loaf is ready to eat. If you would like to add icing here is how; 1/2 can coconut whipping cream 2-4 tsp powdered, freeze dried berries 1/4 cup icing sugar. 1. Sift icing sugar into a mixing bowl, then add remaining ingredients. Mix well, then allow to set in the fridge for 1 hour (if using the coconut whipping cream; yoghurt will not need to set). Spread over the top of your loaf, and generously decorate with fresh Australian blueberries. Enjoy

10.01.2022 Donuts just became a whole lot tastier (and healthier) with this recipe by @healthbyshortstack INGREDIENTS: 1 cup Pancake mix 1/2 cup oat milk... 1 tbsp lemon juice 1 tbsp lemon zest (more for garnish) 1/3 cup fresh Australian blueberries Glaze: 2 cups powdered sugar 1/4 cup water + more as needed for consistency 1/2 teaspoon vanilla extract METHOD: 1. Preheat oven to 180C. Mix your pancake mix with milk of choice, lemon juice, and lemon zest till you get a smooth, thickish batter. 2. Gently fold in Australian blueberries. Spray a donut pan or use a silicone donut pan. Scoop into 5-6 donuts in mould. 3. Bake at 180C for about 11 minutes. Test with a toothpick to make sure it comes out clean. 4. To make the donut glaze, mix all glaze ingredients in a medium bowl. You may need to add a bit more water 1-2 teaspoons at a time for the right consistency. 5. Dunk the top of the donuts in your glaze and sprinkle more zest on top if desired. The glaze will harden perfectly in the fridge.

09.01.2022 These grain-free blueberry and almond butter crumble bars by @panaceas_pantry are a must try! They are vegan, paleo, gluten free and sugar free so they can be enjoyed by everyone! Ingredients Base Layer: 3/4 cup buckwheat groats... 1/3 cup almonds 2/3 cup coconut flour 3/4 cup dates (10 large Medjool), pitted 1/3 cup pure maple syrup 1/4 cup coconut oil 3/4 cup almond butter Blueberry jam layer: 3 cups Australian Blueberries 2 tsp pure maple syrup 2 tbsp water 1/2 cup chia seeds 1 tbsp lemon juice Crumble ingredients: 1 cup almonds 1/2 cup shredded coconut 1/2 cup coconut sugar 2 tsp ground cinnamon 1/4 cup coconut oil METHOD: 1. Add buckwheat, almonds and coconut flour to a food processor. Process until the mix has formed a flour. Remove from the food processor. 2. Now, add dates to the food processor and blend until smooth. Add the flours and pulse to combine. With the blender running, add maple and coconut and process until a dough forms. 3. Press dough into the base of a small (lined or greased) tin. Mine was 15cm square. Add almond butter and spread evenly over the base. Set aside. Blueberry jam layer: 1. Add berries, water and maple syrup to a saucepan. Bring to a boil and cook for 3 minutes on low heat. Add chia seeds and simmer for an extra 5-7 mins, stirring frequently. Turn off heat and stir through lemon juice. Set aside to cool for 10 minutes then pour over the almond butter layer. Use a spoon to spread to create an even layer. Set aside. Crumble method: 1. Preheat the oven to 150C. 2. Add almonds and coconut to a food processor and pulse to form small crumbs. Add to a bowl, along with remaining ingredients. Use your hands to form a crumble texture then spread on top of the blueberry layer. Bake for 25-30 mins and enjoy!

06.01.2022 Add some oo to your favourite food with this delicious blueberry cinnamon scroll recipe by @rainbownourishments BLUEBERRY CINNAMON SCROLLS 3 cups plain flour, plus more for dusting 3/4 cup milk, warm... 1/2 cup melted butter 1/4-1/2 cup sugar or coconut sugar 1 tbs instant dried yeast 1 tbs cinnamon Pinch of nutmeg Pinch of salt Filling and glaze 1 cup Australian blueberries 1-2 cups powdered sugar or 1/4 cup maple 2 tbs corn flour 1 tbs ground cinnamon Dash of vanilla 1. Combine all of the scroll ingredient in a large bowl (or do this in a stand mixer). Mix and knead until smooth. Leave the dough in the bowl, cover with a tea towel and leave it in a warm place for at least 1 hour or until it doubles. 2. Add all the filling/glaze ingredients to small saucepan. Boil for 3 min then simmer for 5 min. Roughly blend to make a chunky puree. Return the saucepan to the heat and stir until thickened. Set aside to cool. 3. Scoop out the dough on a floured surface and roll into a rectangular shape. Spread half majority of the blueberry mixture onto the rectangle, reserving the rest of the mixture. 4. Roll the dough into a tube. Use a sharp oiled knife to cut scrolls out of the pastry. Cover and set aside to rise. 5. Preheat the oven to 180C. 6. Blend the reserved blueberry mixture into into a puree and set aside. 7. Bake the scrolls for 25-30 minutes or until they are slightly golden brown. 8. When the scrolls have cooled slightly, drizzle with the blueberry glaze.

These blueberry cheesecake crumble bars by Rainbow Nourishments are a feast for the eyes Ingredients: Base and crumble 375g plain flour... 190g melted butter of choice 70g sugar Cheesecake 480g (2 tubs) cream cheese 240g canned coconut cream, thick part only 200g sugar, or to taste 50g corn flour/starch Berry layer 150g fresh blueberries 25g jam of choice 25g corn flour/starch Method: 1. Preheat the oven to 180C. Line a 20cm square baking tin with baking paper. 2. Add all the base ingredients to a food processor and pulse until combined. Press 400g of the mixture firmly into the baking tin (set aside the remaining mixture). Bake for 10 minutes till slightly golden brown. 3. To make the cheesecake filling, add all ingredients to the food processor and process until smooth. Pour into the baking tin and smooth the top. Tap the tin on your kitchen bench to remove any air bubbles. 4. For the berry layer, toss all the ingredients in a bowl until combined. Spread/scatter on top of the cheesecake. Crumble the remaining crust mixture on top. 5. Bake the bars for about 30 minutes or until the top is golden brown. 6. Chill the bars for at least 4 hours or overnight. 7. Slice the bars as desired. 04.01.2022 Give your week an extra dose of sunshine with this glorious Cream-Cheese Swirled Blueberry Lemon Bread by The Recipe Rebel INGREDIENTS: 1/4 cup canola oil 1 cup sugar ... 2 large eggs 1 cup Greek yogurt 1 tsp vanilla Juice of 1 lemon 1 1/2 cups all purpose flour 2 tsp baking powder 1/2 tsp salt zest of 2 lemons or 3, if you like things tangy! 1 cup Australian blueberries Cream Cheese Layer 115 g cream cheese 1/4 cup sugar 1 egg white Glaze 1/2 cup powdered icing sugar 1-2 tbsp lemon juice METHOD: 1. Preheat oven to 180C and lightly grease a cake tin. 2. In a large bowl, whisk together oil and sugar. Add eggs, yogurt, vanilla and juice and whisk until smooth. 3. Add flour, baking powder, salt and lemon zest and stir just until combined. Fold in fresh Australian blueberries. 4. Make the cream cheese layer: in a medium bowl, beat cream cheese, sugar and egg white with an electric mixer until smooth. 5. Pour of your bread batter into prepared loaf pan. Top with all of cream cheese mixture and spread evenly. Top with remaining bread batter and smooth the top. 6. Bake at 180C for 60-70 minutes, covering loosely with foil after 30 minutes or when top is golden, until a toothpick in the bread comes out clean or with moist crumbs. Ingredients: Base: 1 cup roasted hazelnuts... 1 cup pitted dates 1-2 tsp water if needed Filling: 1 cup Australian blueberries 3 cups cashews - soaked in boiling water for 15 minutes 9 tbsp maple syrup 14 tbsp almond milk 4 tbsp cacao butter melted (or sub coconut oil) 2 tsp vanilla extract METHOD: 1. In a food processor process the hazelnuts and dates, adding a little water if not sticky enough. Press down onto a lined square 8 cm baking tin. 2. Melt down cocoa butter on the stove on low heat until liquid. Place all the filling ingredients except blueberries into a blender and blend until smooth. 3. Pour out half the mixture on top of the hazelnut base and place in the freezer to set for 30 minutes. 4. Add blueberries to the remaining mixture in the blender and blend again until smooth. Once white layer has formed, pour blue layer on top, smooth and set in the freezer for 4 hours. Slice and enjoy with extra fresh Australian blueberries!

Thanks for sharing Blueberry Mix: 320g Australian Blueberries 1 tbsp Cornstarch... 1.5 tbsp Lemon juice 1 tbsp sugar Crumble: 1 cup quick oats or rolled oats cup plain flour 1 tsp cinnamon cup maple syrup cup almond butter cup thinly sliced or slivered almonds Pinch of salt Method: 1. Preheat your oven to 180C and grease a round ovenproof dish lightly with oil 2. Add Australian blueberries to your baking dish, follow with sugar, lemon juice and cornstarch, mix to coat and set aside. 3. For the crumble, combine maple syrup, almond butter and vanilla in a medium bowl, mix and then add your remaining crumble ingredients. Mix with your hands until large clumps form. Scatter the crumble across the blueberry mixture and use your hands to break up the clumps if required. 4. Bake in the oven for approx. 45 minutes or until the mixture is bubbling on the sides.
