25.01.2022 Got this bad boy back from my taxidermist today, this guy was picked out from 20+ stags over a 3day period in the high country. Patience & persistence paid off..., wild deer are hard to find with monster antlers but this guy was a cracker and his colour was unbelievable. Hence he deserved to be mounted and respected along with feeding the family and friends for a month. Delicious fresh harvested rabbits, seared then slow cooked for 6 hours and at the end of it pour in a small container of thickened cream and serve in a bed of rice or warm crusty bread. I’m proud to say that by helping farmers rid pest animals it create one of the most sustainable foods my family eats. I support local butchers were I can but choose to eat fresh harvested game meats for many reasons. Try it before you judge it!
