24.01.2022 So where do we b...gin? I will try and start at the beginning. Getting ready to set up a distillery has been quite the journey. Between a combination of Australian and state regulations, requirements, licences and policies, along with the need to do lots of research and development into recipes, we can slowly see the light at the end of the Gin tunnel. Its been a long 2020 hasn't it! For us here, at Australian Organic Distillery, we are excited about bringing you, our unique range of botanically infused Gins, followed later by some delicious vodkas and liqueurs. We hope you can join us for the final leg of our trip. The time where we now start putting in the final pieces of our puzzle and get ready for our launch later in the year.
21.01.2022 So why Gin? Now can I be honest with you here, I have not been a huge gin drinker. Growing up amongst my mothers Italian family, we were accustomed to the traditional art of making and enjoying the beautiful delicate notes of red wine. As I became older my tastes turned towards spirits. My curiosity for gin came from noticing the unique varieties that were now available to us on the Australian shelves. With a friend and partner who was passionate about gin, it was not long b...efore my love for gin grew. The questions came thick and fast after that, how was gin made, what were the main ingredients, what was the best way to drink it ;) or garnish it with. So many questions that needed answers, but I must tell you, it has been an exciting journey learning all about gin. As we continue to go through the process of setting everything up, we are grateful for having you here on this journey with us, and thank-you for allowing us to share with you the story behind our distillery. In the mean-time, sit back and enjoy a G and T!

15.01.2022 Let's make Gin! Three simple little words. We started a journey that has changed our world completely. These words were spoken almost a year ago. We began the process of looking for a venue, finding out what was involved in the setup and licencing, speaking to councils, and lots of R and D.... Yes, we had to do a LOT of Research and Development. It was a hard task, but we had to ensure this Gin was perfection. Make, taste, remake, taste, remake, taste, yes it is a long process but someone had to be entrusted with this difficult task Over the coming months, we will be able to share part of the journey, the highs and lows that have brought us to our final location, here in Brisbane. As we move through council approvals, as we start to put the final pieces of the puzzle together we look forward to you joining us for the ride. Initially, we wondered whether we should wait until the doors open, and the drinks were on the table ready for you to go. But that would only be half the story. We wanted to start at the beginning. 06.01.2022 So this week I wanted to introduce my business partner on this journey. His story is a little different from mine. He has been passionate about rum for most of his adult life. In more recent years he became extremely interested in gin, whisky, Agricole rhum and more. With a background in engineering and electrotechnology, he became interested in the science behind brewing and distilling in his early 20’s. Using a little engineering, a little science and a little innovation... he has been experimenting, researching and perfecting his technique over the last 12 months. We are super excited for him to take on the role of Master Distiller in the new year.
