24.01.2022 INGREDIENTS Base 125g butter 1/4 cup brown sugar... 1 cup plain flour 1/4 cup self-raising flour Filling 400g can sweetened condensed milk 30g butter 2 tablespoons maple syrup 3 teaspoons coffee substitute (granulated or powdered) 1/2 cup walnut chopped roughly Topping 1 cup plain flour 2 teaspoons cinnamon 1/3 cup brown sugar, firmly packed 125g butter INSTRUCTIONS Base Cream butter and sugar until combined and stir in sifted flours Mix to form a firm dough Press evenly over base of well-greased (or line with baking paper) 30cm x 25cm baking tin Bake in moderate oven for 10 until starting to brown around the edges Cool Filling Combine condensed milk, butter, golden syrup and coffee in saucepan stir over medium heat until mixtures begins to bubble on base of pan. Continue stirring briskly for about 3 minutes, or until mixture is thick and beginning to catch on base of pan. Pour over the cooled base Sprinkle walnuts over the top Topping Sift dry ingredients into mixing bowl, rub in butter Mix until a firm dough Refrigerate 30 minutes before grating coarsely over the filling Bake in moderate oven for 10 to 15 minutes, or until the topping is firm to the touch. Stand 15 minutes and leave to cool in tin before cutting into slices or squares

20.01.2022 20 minutes of meditation to add some bliss to your day
20.01.2022 Ingredients 3 and 1/2 cups Grated Zucchini (measured before squeezing out excess water) 1 tsp Salt 1/2 cup chickpea flour mixed with 1/2 cup water 1/2 cup Plain Flour... 1/4 cup Nutritional Yeast 1 and 1/2 tsp Baking Powder 1/2 tsp Crushed Garlic 2 T lemon juice 1 cup chopped dill or other herbs salt and pepper to taste 3 Tbsp Olive Oil (for frying) INSTRUCTIONS Grate the zucchini and then add it to a mixing bowl. Sprinkle over the salt and mix in. Then leave it for 10 minutes. The salt will help release the excess water from the zucchini. Then use your hands to squeeze the zucchini and drain off excess water. If you are in a rush, omit the salt water extraction and just squeeze away as much liquid as you can. Place the squeezed zucchini into another bowl and leave the water behind. Once the squeezed zucchini is in a fresh mixing bowl, add in the flour, nutritional yeast, baking powder, crushed garlic and chopped herbs and mix together. Preheat the oven to 150C and place some parchment paper over a grill rack on a baking tray. This is where you’ll place your fritters to keep them warm. Heat oil in pan and working quickly form small balls out of the dough. Press into neat circles and add to the pan. Use your spatula to press them down a little from the top and flatten. Depending on the size of your pan you can cook a few at a time. Cook over medium-high heat for 3-4 minutes, until golden on the first side. Flip with the spatula, and cook for another 2-4 minutes on the second side. If the fritters are getting too brown, reduce heat to allow the centers of the fritters to cook more fully. Work in batches, you should be able to cook the mixture in two batches on the pan. then transfer your cooked fritters to the baking tray in the warmed oven to stay warm.

11.01.2022 These brownies were originally made with white sugar so they were a blonde colour, however because I used coconut sugar the colour is a deep golden brown, so probably more in line with their name. They are light delicious and tangy, great for morning or afternoon tea. Ingredients 2 cups all-purpose or whole wheat pastry flour... 1 1/2 cups coconut sugar 1/2 teaspoon salt 4 scant teaspoon baking soda 4 tablespoons white vinegar 1/4 cup coconut yoghurt 6 Tablespoons vegetable oil (I use avocado oil) zest of 4 lemons 4 Tablespoons fresh lemon juice Glaze 1 cup icing sugar zest of 1 lemon about 2 to 4 Tablespoons fresh lemon juice Instructions Preheat oven to 180 degrees celsius Line a small square cake tin with baking paper Put all ingredients into a bowl. Stir by hand until smooth Spread batter in pan and bake for about 20 minutes until top of the cake springs back to place when pressed and a toothpick or sharp knife comes out clean when poked into the middle of the cake Cool in the pan for 5-10 minutes. Lift out of pan and spread glaze over warm brownies. Glaze Stir glaze ingredients together in a bowl, adding juice gradually until glaze is spreadable, you may not need all of it, you don’t want the glaze to be too runny

08.01.2022 The yummiest thai pumpkin soup A eastern twist on a classic soup. 1 pumpkin cut into pieces and roasted until soft 1/2 onion... 2 cloves garlic 1.5 T cumin seed 1 tsp turmeric 3 T red thai curry paste 1 cup red lentils 2 l water 1 T "chicken" stock 1 bay leaf splash of soy sauce or tamari 1/2 can coconut milk 4 T pepitas Fry onion and garlic in a large heavy based pan until transluscent Add cumin seeds, then curry paste and cook 2 minutes Add roasted pumpkin and cook 2 minutes Add water, stock powder, bay leaf and bring to a gentle boil Simmer on medium heat for 20 minutes until lentils dissolve and flavours have a chance to combine. Remove from heat, cool a little and blend in batches Plate and top with a generous drizzle of coconut milk and toasted pepitas, and cracked black pepper

05.01.2022 This rich and light mousse is so simple and easy to make and it’s healthy! You should get approximately 3/4 cup Aquafaba from each can of chickpeas. You can also use the liquid from white beans or any other beans for that matter. Place into a bowl with 1/4 cup fine coconut sugar (you can blend it if it isn’t fine when you buy it). Alternatively you can use icing sugar. Now whip with a hand held or upright electric beater for approx. 10 minutes or until the Aquafaba forms p...eaks and is very thick and stiff. Don’t worry you can’t overheat it, better to beat too long than not enough. Melt 125g vegan chocolate and wait until it cools down a little, you don’t want it to be too hot when you add it or it will break the Aquafaba down. Stir through well, spoon into cups and refrigerate until set about 1/2 hour Decorate with your favourite toppings

02.01.2022 Meditation to cultivate Insights We all need insights to solve our problems, but we can’t experience an insight just by the strength of our mind and intelligence. Instead of struggling in the muddy waters of the mind, endeavoring to find a solution to a problem, take your mind and immerse it in Transcendental Sound. When your mind tries to go back onto the problem, then gently bring it back to the comforting sounds. Then from this rested condition, a solution or decision wil...l arise from within, like a bubble of oxygen that naturally rises up from the mud on the bottom of a lake.
