22.01.2022 Being part of the CEO sleep out made me appreciate how hard it actually is for people who spend every night sleeping on the street . We got given two pieces of cardboard one to sleep on and one to cover us . We were given a basic meal and had to try to sleep in near freezing conditions. It was one rough night but we raised a lot of money and awareness of the terrible plight of many people around the world #ceosleepout #teamaster#teaeducation

The leaves are quite large and the liquor deep bronze and full of flavour with notes of brown sugar . 11.01.2022 Teamasters Cup Indonesia ! What an awesome time we had . Amazing contestants with such a high level of competition . We also held some of our classes during the breaks with @neysavaleria @austeamasters_id .The tea mixology section was such a great tasting adventure and so hard to judge . Indonesia has such a variety of beautiful teas . Delicate silver needles , amazing oolongs and rich black teas make for a great tasting experience especially from our sponsors @bankitwangi_official

Such a beautiful experience working with these dedicated tea farmers from Boseong in Korea . 12 farmers who I have the pleasure to work with to each year create Korean breakfast tea . A unique blend of black teas with notes of honey , malt , roasted hazelnuts . No milk needed ! We are so proud to be involved . Normally each year at this time the teas are cupped in Boseong , this year I will be cupping them here in Australia . 09.01.2022 Tea Aussie style . We put the tea in what we call a Billy. It is like a giant lidded cup. We add boiling water and then we throw the billy round and round using centrifugal force and a strong arm to push the leaves to the bottom of the billy and which creates a perfect cup of rich strong black tea . It takes skill and I have seen plenty of accidents of people hitting a tree branch as you have to swing it high.Of course you only do this in the bush #australiantea #teamaster #teasommeliers #teaeducation #teatastings

The touch is important gently tossing the fresh leaves and pressing them on the base and sides of the pan without burning the leaf.
