21.01.2022 On 24 June 1977, my uncles Dikran, Manuel, Lutfi and John Gergi together with my dad Elias started trading in Australia as Baalbek Bakery. They eventually expanded to 3 stores before my dad retired 12 years ago. While each store is now independently owned, we stand on the shoulders of their monumental efforts, gifting us this wonderful product. Today I paid a visit to each of the surviving uncles to thank them for their guidance - pictures below. Finally, the original bread whisperer and master baker, my uncle dikran, passed away too early in life and this happy moment is tempered by the memory of his loss.

20.01.2022 Today marked an absolute highlight of our baking lives - a visit to BFB in Temora with our flour supplier Allied. We saw wheat in its early stage of development as well as harvested grain in bunker storage, ready for shipment to millers such as Allied who then produce the finished product we use in our mix. We also witnessed Australian agricultural ingenuity in these parts where land is so beautifully utilised by BFB without the assistance of irrigation. Inspirational!

Jeremy Strode was a dead set legend and his favourite ingredient was Parsley, which made him even dearer to our Lebanese hearts. Lauren Murdoch crisped up our Lebanese bread and served it with some sensational Spanish anchovies on a cloud of parsley olive and caper to make this an unforgettable canapé.
