25.01.2022 Wet Wednesday Recipe - Vegan Peeking Duck Pancakes (with hoisin sauce and fig glaze) As we all know in our heart of hearts Peeking duck is the worlds best starter, any recipe that has been around 800 year and its only improvement has been the addition of a bicycle pump has to be a culinary classic. Yesterday rather miffed that being a new venue we miss out on qualifying for the Covid support grant ( thank you Dan's bureaucrats ) I decided to hit the kitchen and see if I could... create a viable vegan alternative to Gods own starter. Required: 1 tin green jackfruit 1 jar hoisin sauce ( 7.99 for 2kg at KFL should last you all lockdown, smaller sizes available ). It's possible to make you own from prunes and black beans which does taste better ) 1 pack frozen peeking duck pancakes ( you can make these yourself by sticking two small balls of pancake dough together with oil, rolling them as thin as possible and then using the oil to peel them apart, thus achieving a near translucent pancake, trust me, its waaaaay to fiddly, buy the damn things ) Cassava crackers Figs (optional) Spring onion, shred Cucumber, julienne 5 Spice (again easy to make you own if desired ) Method: Drain and shred jackfruit with fork and mix in two generous table spoons of 5 spice. Let it rest an imbue flavours, maybe have a stiff drink. Heat oil in pan and cook two cassava crackers. Add figs, sugar, water and lemon juice in a saucepan, simmer for 10 mins, let stand for 20 more mins, then strain off delicious syrup. Lightly fry jackfruit, until parts are starting to crisp, then stir in enough hoisin to coat the fruit, and heat through, finish with a metric glug of fig syrup. Pop pancakes in microwave ( or pop-ity-ping as the Welsh awesomely nickname it ) for 1 minute. Load pancake with generous amount of jackfruit, top with shredded spring onion and cucumber, add shards of Cassava cracker, roll and gobble up. One tin of jackfruit makes 6 pancakes. www.babahawker.com Doubt this will go on our menu but if you ask nicely we will make you some.

25.01.2022 Sour, bitter sweet refreshing Kaffir lime gin tea recipe! We thought we would share something a little different, locked down and staying local, lets forage for what nature has to offer, and so we would share one of our favorite Malaysian tea recipes, Kaffir lime tea. (or Makrut lime in newspeak) First forage some Kaffir limes, this time we are going to use the fruit, not the leaves, we found a particular good specimen not far from union street, then forage a good bottle or... three of quality Gin, we found these on Gaffney street a while ago and have been saving them for a rainy day. Wearing a mask out and about greatly improves foraging opportunities, we found the remaining ingredients with ease locally, sugar, ginger, lemongrass, mandarin, tangelo. 1: Decant the Gin into teapots, obviously since we are making tea. 2: Place the lemongrass in a small bowl and pulp it, we used a stick blender, you could also use a wood chipper, or mincer, but a paper shredder may jam and ignite. 3: Delicately cut the Kaffir into wedges 4: Juice the limes, tangelo & mandarine, retain the peel 5: Add the juice to the gin 6: Add the Kaffir wedges to the mix 7: Use the lemongrass and ginger syrup to sweating the brew 8: Add fruit pulp and citrus peel to the teapots infuser and insert. 9: As any good Englishman will tell you the secret to good tea is to let it steep for a few days in the fridge. 10: Test the brew and sweeten to taste 11: Consume over ice with soda water or good quality a tonic If this seems like too much effort, we sell the finished product in the drinking jar for $12 a pop. www.babahawker.com 148 Sydney Road, Brunswick 9380 9824 (phone is working now)

19.01.2022 Yes it's very heavily peated, but it does not taste that way, surprisingly delicate, it's far more complex, and dances on your tongue, changing dramatically in flavour for 45 minutes plus, the perfect nightcap dram. I never knew scotch could be this good, I fell in love it all over again due to this bad boy.
