I must admit it’s not my own recipe but so thankful I stumbled across it because it’s just as good as Ramen at a restaurant! 23.01.2022 TUESDAY RECIPE: VEGETABLE SOUP A simple way to use up your leftover veggies in the kitchen! You can change this recipe for vegetables you like or use what you have. Place all ingredients in a pot and simmer away *3 potatoes... *2 carrots *1 Spanish onion *1 cup spring onion *1 cup baby spinach (add at the end) *1/2 cup fresh herbs (I used mint) *1 Litre vegetable stock *Salt & Pepper Let me know if you try my vegetable soup recipe! #giftofsleep

22.01.2022 TUESDAY RECIPE: Sausage Rolls! A super quick and easy meal for parents to prepare and enjoy while your babies are down for a nap Ingredients:... 500g beef mince or Quorn mince (Vegetarian) 1 brown onion, chopped. 1 carrot, grated. 1 bunch of sage/herb of your choice- chopped finely. 2 eggs (+1 for brushing on pastry) 1 packet of Puff pastry Method: -Combine all ingredients in a large bowl. -Cut each piece of puff pastry in half and brush egg on each. -Place a handful of mixture into the centre of the puff pastry and spread to the edges. -Fold the bottom 1/3 of the pastry on top of the mixture with a little egg to keep it together. -Repeat with the top 1/3 of pastry. -Cut in half and place on a baking tray at 200 degrees for 40min or until golden brown. 20.01.2022 Something you may not know about me is that I love OCEAN SWIMMING! Early morning trips down to the beach before sunrise and during the day when I can squeeze some time in. It’s amazing for my health and well-being, great for the skin and keeps me fit. And a bonus when I’m swimming in my training group! 20.01.2022 A bit late for my TUESDAY RECIPE but it’s a good one! I had some family members over this week and was pressed for time to make something for dinner. I had a pork belly in the fridge and an Air fryer so it was time to make a roast No oil used, just rubbed salt on it, scored lines on the rind and left it in the fridge until it was ready to place in my air fryer for roughly 40min. The crackling is amazing and crunchy, no hard work needed You could try this recipe with any roasting meat and dinner is ready before you know it. #giftofsleep

11.01.2022 SPINACH & FETA ROLLS I’ve cooked standard sausage rolls before but these are a great, lighter alternative! It only takes 10 minutes to prep and tastes so fresh and full of flavour! Ingredients:... 250g baby spinach, chopped. 200g feta, chopped into small squares. 1 brown onion & 2 garlic gloves, fried. 1 shallot stalk, chopped into small pieces. Salt and pepper 1-2 tbls dried basil or mixed herbs 2 sheets of puff pastry (or any kind of pastry) 1 egg (for brushing pastry only) Method: -Fry the onion and garlic. Once done, add the spinach to wilt. -Combine all ingredients in a large bowl. -Cut each piece of puff pastry in half and brush egg on each. -Place a handful of mixture into the centre of the puff pastry and spread to the edges. -Fold the bottom 1/3 of the pastry on top of the mixture with a little egg to keep it together. -Repeat with the top 1/3 of pastry. -Cut in half and place on a baking tray at 200 degrees for 20min or until golden brown. Serve with sweet chilli sauce or tomato relish & Enjoy!



11.01.2022 SELF-SETTLING: This is something we need to learn how to do because it’s not a skill that we’re born with. This is what my Gift if Sleep program is all about. When babies are able to get themselves off to sleep independently, the benefits are far-reaching! 02.01.2022 GOLDEN RULE #2 This one is for all parents, whether you are a solo parent or not- you need to commit to the program if you want to see all the amazing benefits that come with it. You should both be supportive of the journey you are taking with your baby in order to give them back the gift of sleep.... If one of you is unsure about the program, it won’t work. You need to be in it together, supporting one another on this journey. If you’re a single parent or your partner is away, consider asking a close friend or relative to stay a couple of nights for moral support and to help you stick to the program. 02.01.2022 TOMATO & RICOTTA FETTUCCINE Some pasta dishes are hard to perfect, but my one can be done in less than 15min! Ingredients: (Serves 2-4)... 4 large Roma tomatoes (or truss tomatoes) 1 tbls coconut sugar (or white sugar) 1 large handful of fresh Basil 1/2 cup water 300g ricotta (less or more depending on how much you like it) 1/2-1 packet of fettuccine or any pasta you already have at home! 1 tbls any kind of oil (I used olive oil) Method: Heat a pan on high heat with the oil. Slice the tomatoes into quarters and add to the pan. Add the coconut sugar into the pan. Fry for 5min and add 1/2 cup water. Add 5-10 basil leaves and leave to simmer. Prepare and cook the pasta as you usually would. Add the pasta and ricotta into the pan and top with basil. Stir everything together and enjoy! What’s your favourite pasta dish? 01.01.2022 THE COLDER MONTHS: Sydney weather is quite cold and rainy today but still so beautiful! So I want to talk about preparing a nursery for the colder months.... I’m not a big fan of bar heaters but if you choose to use a low electric bar heaters it’s imperative that you leave the door ajar. That way if there is a malfunction during the night, when the rest of the family is asleep, the heat will have somewhere to escape. A better option is a cellular blanket of top of your baby. Safety is the priority, so a lovely stretchy cotton blanket (with breathable holes throughout) is what you want. Would love to know how you keep your babies warm during the night. 01.01.2022 PREPARING THE NURSERY: Before any consults, we need to prepare the nursery. Many topics to cover in this area but ‘Mobiles and toys’ is an important part. Gone! Cots are for sleeping, not entertaining! Your baby’s imagination and the general environment of the nursery will provide more than enough joy and stimulation for them as their little minds wander and relax. Anything more than that can distract and overstimulate them and be a barrier to sleep. Is your nursery relaxing...? #giftofsleep #babysleepconsultant

01.01.2022 GOLDEN RULE #1: Your baby must be well. You don’t want to rush into doing a sleep program before you have agreed to all my Golden Rules. I’ll be posting them each week but if you want to know more, feel free to message me for a consult 1. Your baby must be well.... Don’t start a sleep program when your child has a cold or any type of illness, as they Will understandably be more grizzly and need extra comfort. It’s also preferable that you are 100% well too. Before you start a sleep program, I’d advise you to get your paediatrician to confirm that your child is in good health. #thegiftofsleep
