23.01.2022 We were fortunate to visit Mortet in 2017. The vineyards are things of beauty, every vine tended by hand. He is without question one of the finest growers in the Cote and as wines are the products of great fruit it is no coincidence that he is producing some of the finest wines in Burgundy today. It's secret lies in the 150 million year old Kimmeridgian bedrock, full of limestone and marl that gives the wine a chalky almost saline quality that matches the seafood of Bacash perfectly. Over the centuries four distinct terroirs have been identified in ascending hierarchy of quality; Petit Chablis, Chablis, Premier Cru and Grand Cru.
