18.01.2022 Tonights dinner! With a few adjustments. I am using coral trout instead of barramundi as thats what I had in the freezer. I dont have any pomegranate so am using little tomatoes chopped olives and mint mixed through the quinoa. I am also using lemon zest instead of sumac. I have made the original recipe and it is yum. 17.01.2022 In the Air BnB weve been in while looking for our new home, while its freshly renovated and the building is structurally great and I dont experience any moul...d/CIRS symptoms here (wahoo!), there is thick condensation on the windows in the morning. This is not a property owners fault and in apartment buildings youre not allowed to change up your windows just cause you want different ones, even if you were an owner who realized the damage that condensation and humidity inside can cause to your home or investment. If Im going to be anywhere longer than a couple of days, you might laugh but I bring a dehumidifier/filter in 1. The @philips 5000 series one (not sponsored). Anyhoo while its pointless running one with a window open I wanted to show you the screen with humidity level change over just 30 minutes and how quickly humidity levels can drop if you let air circulate WHICH in turn reduces the likelihood of mould growth as the under 60% humidity makes it unfavourable for it. So. I open the windows every morning for a good hour to dry up the condensation and encourage air flow and reduce humidity inside. Then because its winter I close them back up and maintain the low humidity with the dehumidifier rest of the day. If you live somewhere super wintery you might need to rely more on dehumidification and potentially revising window closures and home breathability (check out @undercoverarchitect coverage of passive house) Builds) than opening windows. You can sleep with a dehumidifier on too but I prefer not to personally. Up to you as long as you dont let a 60% humidity level be a permanent thing in your home more than a few hours here and there and allow mould to find its opportunity. This is why bathrooms and laundries get mouldy in the absence of systemic leaks. Its just too darn humid in there for too long. Air Circulation and reducing humidity is essential. Hygrometers to measure indoor humidity are cheap at your hardware store. If I owned this property Id make the asking price weekly $20 more and say electricity included and train them on this use of the machines for the protection of their possessions (leather/softwood furnishings) and health (asthma/respiratory and CIRS) and of course for my investment owners and tenants have to start working together for everyones benefit See more

17.01.2022 Sorry about the late post but I am trying to stick to my posting a recipe every day! . Tonight its about what to do with leftover chicken. Since it was just my husband and I for dinner last night we had half a chicken leftover. Rather than eating it at lunch (which was hard!) I was keen to repurpose it for dinner. So along came the choice of chicken laksa or fried rice dish with chicken. Well I chose the first. I hadnt made chicken laksa from scratch before and next time I... would allow more time as there was a bit of prep involved but I think it was more that I started a bit late in the evening. It was really delicious. So if u are up for it I would recommend giving it a go. I didnt have any bean sprouts so also spiralised some zucchini. You could also substitute noodles of your choice for the spiralised veggies. I also only used one Long red chilli as I didnt want it too hot. It was perfect for us. If chicken laksa isnt your thing theres another great little recipe here for quinoa fried rice to which I would throw in the leftover chicken also but you could just keep it as is. 16.01.2022 Happy Easter morning everyone. Praying its a peaceful and joy filled one for you. Heres a little piklet or small pancake recipe that is delicious and healthy. (Its from the talented Merry maker sisters) Its also a great alternative if you have a sensitive tummy or prefer to be grain free as they are made with coconut flour. I used maple syrup as the sweetener. Give them a go and maybe as a special treat for Easter you could even top them with a little melted chocolate too . I love them with berries and coconut cream or yoghurt. Enjoy!

14.01.2022 A little late this was last nights dinner - a re creation of a recipe from one of my old recipe books. Simple and yummy. Serves 2-3. Honey Mustard Chicken ... 3 teaspoons Dijon mustard 1.5 tablespoons olive oil 1.5 tablespoons apple cider vinegar 1.5-2 tablespoons honey 1-2 chopped garlic cloves ( depending on size) 1-2 tablespoons chopped parsley 6 chicken legs Preheat oven to 180 degrees. Combine marinade ingredients in a small bowl. Place chicken in a tray lined with baking paper and coat chicken legs in marinade. Bake for approx 40 mins or until cooked through, basting with any leftover marinade. Thats it. Easy peasy . I love to serve this on top of mashed sweet potato- mashed with a nice big drizzle of olive oil and Himalayan salt. Plus steamed veggies of choice. I apologise for the amateur photo but it is really yummy

13.01.2022 Just baked this banana bread today. It really was so delicious. . I only used 2 tablespoons of maple syrup instead of the 3 mentioned here. Depends how sweet you like it but the banana adds its own sweetness. Then I sprinkled flakes coconut on top before baking. A little tahini spread on thinly before eating adds a little more yumminess. 09.01.2022 Whats for dinner tonight? At our house we are having Lemongrass and Ginger Slow Cooked chicken. As you can tell from the photo of this recipe it has been cooked many a time. Recently I have adapted it a bit. To this original recipe I now add tumeric - fresh if I have it - about 4-5 com piece grated; I dont use oyster sauce or soy sauce and use coconut aminos as a substitute for both. Personal preference. I definitely keep it gf. Check sauce labels for this and any other unwanted sugar or additives. I also often use capsicum instead of the sugar snap peas. It is easy and tasty. I love slow cooked meals - easier to digest and its mostly done for you when it comes to dinner time. Serve with rice if you wish and some lovely steamed veggies. Let me know if you try it.

08.01.2022 Now may just be the time to start upping your immunity! With a potentially debilitating virus on our door step you cant start too early going about strengtheni...ng immune system. One amazing way is through introducing fermented foods. Did you know that fermenting food increases the number of nutrients available to the body? For eg when cabbage is fermented we absorb up to around 300 times more vitamin C from it than raw or cooked cabbage? 70-80% of our immune system lines our gut. 07.01.2022 Whats for dinner tonight? Actually I made this last night and have leftovers of it for tonight! Always a bonus! This is my go to lamb casserole dish. You could also slow cook it. It is fairly mild, not spicy. I tend to use mostly 1kg of lamb with 1 onion but keep the quantities of the spices the same. This serves around 4 large of five smaller serves with added veggies. I add in veggies in the last half hour. Eg chopped pumpkin, cauli, broccoli and sometimes eggplant that... I first brown in a frypan then add in closer to the end. I add just enough stock to cover. I tend not to add chickpeas as I find the veggies enough. You could of course make as per recipe and have veggies on the side. I dont usually have preserved lemon so I use lemon peel or just a couple good squeezes of lemon. Served with an extra squeeze of lemon and fresh coriander. Sorry about no picture. 07.01.2022 Whats for breakfast? One of my go to breakies is a Chia pudding. This one is so easy - all you need is just a few ingredients and a few minutes to make it. It can even be prepared the night before which is always a bonus. Full of protein and fibre this will get you off to a good start for the day. Here I show it served two ways - with some berries and banana and homemade granola and another with a few spoonfuls of my delicious coconut yoghurt - made from Kultured Wellness Kultures. 04.01.2022 Have you tried making your own banana icecream? It is so easy and it can even be made with just one ingredient - frozen bananas!! Freeze a few bananas - sliced first and placed in a sandwich bag or container. Then pop straight into you blender and blend for a minute or two. It turns into a soft serve icecream. Trick is you need to serve it straight away. There are a couple of other versions out there and if you find your blender is struggling to mix the bananas I add a few s...poonfuls of coconut milk( the thick part) or cream - best if it had been in the fridge for a few hours or overnight. You can also add in a spoonful of maple syrup, vanilla and even a few nuts or chocolate chips. Its just limited by your imagination. Everyone will love it. 04.01.2022 What was for dinner last night? I really like this pizza base. Love that it includes sweet potato. Its a great way to sneak veggies in. I substituted a gf flour mix ( see recipe in comments) for the spelt and goats cheese for the dairy cheese in the topping. You can use whatever you like for the topping. I keep mine veggie based. Whatevers in the fridge. Last night it was mushroom, garlic, eggplant, olives, onion, baby spinach and basil. I did fry the eggplant a little ...first. I prefer it that way. If I have asparagus I love to throw that on there too. I do find the base can taste a little raw sometimes so I usually cook it for an extra 5-10 mins. Let me know if you give it a go See more

04.01.2022 Ginger - who doesnt love it? Heres a favourite gingerbread cookie recipe I love to make from Deliciously Ella. Although traditionally eaten at Christmas there is no reason gingerbread cant be eaten at Easter or anytime! I have some cute rabbit cookie cutter shapes I use for Easter but you can use whatever you have on hand. Enjoy!
