17.01.2022 Hey Victoria How we all doing? We’ve had some very welcome news about restrictions lifting for us regional folk, but can I be honest with you? We’re exhausted. This year has been a crazy rollercoaster of emotion, stress, trying to stay positive and trying to keep up with all the rules and regulation changes! And we’re really feeling it right now. But, it’s almost school holidays (home learning the last few weeks has been HARD!!) And Leigh and I will both have some time of...f our ‘day jobs’ to regroup and focus on releasing more whisky , the distillery move , and planning for the year ahead Now we just need our beloved Melbourne to get out of lockdown and back to it’s beautiful, vibrant, most liveable city-self! We miss you Melbourne Take care and we’ll hopefully see you soon

16.01.2022 I just love this photo by the amazingly talented @bechaycraft It makes me want to reach in, grab the cup and take a sip of delicious Backwoods single malt. I can see the Aussie bush landscape, smell the eucalyptus trees and hear the kookaburras laughing. Are you there with me?

10.01.2022 One more day and Leigh will be joining the boys and I on school holidays! Can’t wait to have time for whisky and chats up by the dam That is after big days in the distillery, planning for the site move and launch party , bottling two new releases and keeping on top of the crazy grass-growing and weed-forest time of year! Yeah, we’ll still be earning that evening whisky. But we’ll be in our happy place, that’s for sure

09.01.2022 Three years of shoveling grain out of the mash tun. While it’s been good for our muscles it’s going to be soooo good to upgrade to the new, self-emptying mash tun that will be set up at the new site! We are passionate about handcrafting our whisky, but I reckon we‘ve earned an upgrade from shoveling, don’t you?

05.01.2022 Our distillery sits beside a woodlot of native Aussie trees. We finish our ferments with an ‘open top’ to encourage wild yeast and allow the surrounding environment to influence the ferment. Does this help create a unique ‘Backwoods’ flavour profile? We think it does! And luckily, our new distillery site is also surrounded by native trees, so we can continue this process when we move

03.01.2022 RYE RELEASE // Our next Rye whisky release is only a few weeks away! Batch #2 is a mash bill of 60% malted rye, 27% barley, 10% wheat, 3% chocolate malt. A vatting of 2x American Oak casks, that previously held Australian Cabernet and Shiraz. Hoping to release by end of October! Stay tuned for more info soon...
