09.01.2022 2020 was a hard year for a lot of people - especially those having to sell and buy during the lockdown period. I was so happy to have helped these clients achieve the price that would help them move to their next chapter. . . "We never sold before so had 7 appraisals done and were down to choosing 1 of 2 shortlisted. We went for an inspection on a Saturday and Badiha was managing that property. Not having met her before, we felt an instant warmth coming in and a sense of co...nfidence. 05.01.2022 During this time in lockdown, it seems that were all spending a little more time getting to know our inner-baker. My favourite? Banana bread! Its easy and delicious. This recipe from Donna Hay is my absolute favourite! Try adding in some walnuts, blueberries or raspberries (or even some chocolate!) If you make it, post a comment below! Id love to see! ... . . . INGREDIENTS: 125G butter, softened 1 CUP (175G) brown sugar 1 TEASPOON vanilla extract 2 eggs 2 CUPS mashed banana 1 CUPS (255G) plain flour sifted 1 TEASPOON baking powder sifted 1 TEASPOON baking soda 1 TEASPOON ground cinnamon CUP (115G) golden syrup Butter, extra - to serve METHOD: 1. Preheat oven to 160C (325F). Place the butter, sugar and vanilla in an electric mixer and beat for 810 minutes or until pale and creamy. Scrape down the sides of the bowl. 2. Gradually add the eggs and beat well to combine. Add the banana, flour, baking powder, bicarbonate of soda, cinnamon and golden syrup and stir to combine. 3. Spoon the mixture into a 26cm x 11cm (2.5 litre-capacity) lightly greased loaf tin lined with baking paper. Bake for 6065 minutes or until cooked when tested with a skewer. 4. Cool in the tin for 20 minutes before turning out onto a wire rack to cool completely. Slice and serve with the extra butter. Serves 68.
