21.01.2022 Whole new event with a new menu. this time the focus will shift away from the coastal creeks and out to the reef for inspiration. Have a few ideas and looking forward to seeing what I have to work with. Fingers crossed for nice weather.



15.01.2022 Thanks to everyone who came to our Bait to Plate lunch on Sunday 28th Feb and our special thanks to Trevor & Teena Draper. Unsung hero's of the Whitsunday tourism/restaurant industry with 50 years of commercial fishing supplying the seafood lovers of the region. I will be holding another lunch on Sunday 28th March, this time focusing on our offshore reef species. Will set a menu a few days out when I know what is available but hoping for some FlameTail , red emperor and Pearl Perch.

01.01.2022 Think I have now nailed my menu for Sunday. Great weather means great local fish. Mud Cab Ravioli w/ saffron scented bisque Steamed Crocodile and Ginger dumplings, Green pawpaw salad BBQ’d Brown Tiger Prawns w/ garlic & Chili... Grilled Tripletail w/ classic Beurre Blanc and crushed fried baby potatoes Thai Curry of local Fingermark w/ Coconut rice Lychee infused panacotta w/ Mango sauce Will be announcing another B2P lunch soon for those who missed a booking and it will have a complete new theme.
