22.01.2022 WHAT IS CAKE FLOUR? Q: What is cake flour and is it available in Australia? A: Cake flour is a low protein flour which usually contains about 7-8% protein (which you will find expressed as grams of protein per 100g flour in the nutritional panel on the packet). In comparison, regular plain flour contains around 10-11% protein while strong or bread flour contains around 12-15% protein. Why the protein content is important is that its an indicator of how much gluten can ...be developed in the batter or dough and how strong the baked structure will be. High protein = strong structure Low protein = weaker, softer structure High protein flour is used in bread bake where a strong structure is needed to effectively hold the carbon dioxide bubbles, while low protein flours are used when you want to achieve a more tender, softer crumb like in a sponge cake (and why it is called cake flour). It is available at selected supermarkets and specialty food stores, usually as a self-raising flour, but if you are unable to get hold of some you can make your own by reducing the protein content of regular plain flour by substituting some of it with cornflour (which is gluten protein-free). To make a homemade cake flour substitute: Measure 150g (1 cup) regular plain flour and then remove 2 tablespoons of it. 19.01.2022 BakeTip #128 STRAWBERRY SYRUP Strawberry season is in full swing at the moment here in Australia and they are super cheap. Making a strawberry syrup is a great way to take advantage of the glut and the full flavour of this in-season fruit, not to mention a fantastic way to add extra flavour (and moisture) to your sponges and buttercakes. I always use a ratio of 2 parts strawberries, 2 parts water and 1 part caster or granulated sugar by weight (for example: 500g strawberries,... 500g water, 250g sugar). To make, hull the strawberries, and chop. Transfer to a saucepan then cover with the water. Bring to the boil and simmer for 20 minutes or until the strawberries are pale and soft and the water is pink. Strain the strawberries reserving the water. Discard the strawberries and transfer the water to a clean saucepan. Add the sugar and stir over medium heat until the sugar dissolves. Bring to a simmer and simmer for 5 minutes or until the syrup reaches the consistency and sweetness you want. Pour into clean jars or bottles, seal and place in the fridge where it will keep for up to 2 weeks. Use to brush or pour over your sponges or buttercakes before layering with fillings or making a trifle. 13.01.2022 BakeTip #127 CREATING A CRISP BREAD CRUST There are many things that can affect how crisp a bread crust will turn out, but the most influential of them all is what is known as steamy heat. Steamy heat is created by adding water to a hot oven, which of course turns to steam. Why it is so effective in helping to create a crisp, crackling crust is because the moisture that sits on the surface of bread dough helps the enzymes break down the carbohydrates into sugar, and with th...e help of intense oven heat gives the crust a deep golden colour and crisp texture. 07.01.2022 Q: Can you please give me some tips around what I should be looking for when my cakes are cooked and ready to be taken from the oven please? (Asked by a recent Cakes for Beginners online course student). A: Generally there are four main things that will indicate when your cake has finished baking and is ready to be taken from the oven. 1 Aroma the cake will have a toasty, nutty aroma and your kitchen will smell wonderful! 2 Colour the top of the cake will often be golde...n brown (unless the colour is dominated by an ingredient like chocolate or it contains little sugar). 3 A small gap cakes will often start to pull away from the side of the tin leaving a very small gap between the cake and the tin. 4 A clean skewer this is the most reliable sign that your cake is cooked. A thin metal skewer or bamboo skewer inserted into the centre of your cake should come out clean. Check by running it between your fingers (not just by looking at it). If it is sticky, bake it for another 5 minutes before testing again. 03.01.2022 WHAT IS CAKE FLOUR? Q: What is cake flour and is it available in Australia? A: Cake' flour is a low protein flour which usually contains about 7-8% protein (which you will find expressed as grams of protein per 100g flour in the nutritional panel on the packet). In comparison, regular plain flour contains around 10-11% protein while strong or bread flour contains around 12-15% protein. Why the protein content is important is that it's an indicator of how much gluten can ...be developed in the batter or dough and how strong the baked 'structure' will be. High protein = strong structure Low protein = weaker, softer structure High protein flour is used in bread bake where a strong structure is needed to effectively hold the carbon dioxide bubbles, while low protein flours are used when you want to achieve a more tender, softer crumb like in a sponge cake (and why it is called cake flour). It is available at selected supermarkets and specialty food stores, usually as a self-raising flour, but if you are unable to get hold of some you can make your own by reducing the protein content of regular plain flour by substituting some of it with cornflour (which is gluten protein-free). To make a homemade cake flour substitute: Measure 150g (1 cup) regular plain flour and then remove 2 tablespoons of it. Alternatively, use a teaspoon or tablespoon measure or a small ice cream scoop (depending on the size you are making) to scoop the mixture, level the surface with the back of a butter knife and then shape as required. You will also find the more biscuits you shape, the better you will get at recognising how a particular sized portion feels in the palm of your hands as you roll them.
