22.01.2022 Today's bounty. A loaf and rolls for Mrs Bakerman's birthday lunch (happy birthday agapi mou @zorbaxs). A loaf for home and one to give to an old friend as a thank you for helping me out. I made the rolls using @danlarn method of slicing up a boule. Didn't dust with enough flour though so it all got very sticky and the result was misshapen rolls. 15.01.2022 I've decided to take the plunge and get into the bread business. Well, not quite a plunge, more of a dipping the toes. Slowly slowly, see what happens. To begin with, I'll only be able to bake small quantities on Sundays for delivery to McKinnon and surrounding suburbs but hope to be able to expand if there is demand. I'll provide more information here about the ordering process shortly so pease follow this account if you're interested.

06.01.2022 The top shelf holds the stone that I've been baking on. On the bottom shelf is my new baking steel. 1cm thick and very heavy (11kg). You can see how dark the base of the bread is in the second photo. This isn't possible with the stone, which despite reaching the same temperature as the steel, doesn't transfer that heat as well. Physics and stuff. The steel got so hot that it actually melted the wax off the baking paper, so I need to find a different solution for loading loaves onto it. In addition to the steel, I've got a bit more equipment arriving over the next few weeks that will allow me to cook more loaves on each batch so that I can start selling to you lovely people. #microbakery #sourdough #rocbakingsteel #opencrumb #slowbread
