Ingredients: Crumble 20g Almond meal 20g Plain Flour 20g Sugar 1/2 Tsp Salt 10g Unsalted Butter, Soft Muffin 113g Unsalted Butter, Soft 195g Sugar 2 Large Eggs 2 Tsp Baking Powder 1 Tsp Vanilla extract 1/2 Tsp Salt 241g Plain flour 113g Full-cream milk . . Method: 1. Preheat oven to 190C fan-forced. Line 12 muffin tray with patty pans. 2. Prepare crumble by combining all ingredients with butter- until it resembles breadcrumb consistency. Refrigerate and set aside until use. 3. In a medium mixing bowl, beat sugar and butter until well-combined (pale and fluffy). 4. Add one egg at a time, scraping the sides of the bowl and ensure that it is well-combined after each addition. 5. Bear in vanilla, salt and baking powder. 6. Add flour and milk alternatively, beating gently after each addition. 7. Set aside a handful of blueberries for topping, and add the remaining amount into the batter. Fold the blueberries into the batter. 8. Scoop the batter into the patty pans filling 3/4 of the each case. Top each muffin with crumble topping and blueberries. 9. Bake for 30 minutes or until a skewer inserted into the centre of the muffin comes out clean. 10. Remove from the oven and leave to cool for about 10 minutes before serving. *Using @bakewithlighthouse All-Purpose Plain flour because their flour are triple- sifted and always results with beautiful bakes!
