16.01.2022 Some Friday night dinner inspiration... This is SUPER quick and easy to make is low in carbohydrates and full of flavour and nutrients! For the base I used chicken thigh fillets (but you could use any protein here, beef, lamb, fish, tofu...) and my marinade contained extra virgin cold pressed olive oil, the juice of 1 lemon fresh garlic Dijon mustard freshly chopped parsley and a little basil and a few sprinkles of capers (because I love them ). Mix it all together and poor over the chicken. Then pop this in the oven and roast until golden. I served this over a salad but it would also be yummy with some cauliflower rice! A useful tip to help train their little tastebuds is to offer them the same ingredients contained in your salad but present each ingredient individually. This will also mean the whole family is eating the same foods and you’re not having to prepare multiple dishes. A base of @shiraleeorganicmeats free range turkey mince and diced tempeh, mixed with some crushed garlic, chopped celery and red capsicum, grated carrot and halved raw macadamias. Then some additional flavour added with a good drizzle of sesame oil, coconut aminos and tamari sauce. All thrown into the freshest, most crunchy iceberg lettuce leaves I have ever seen... 12.01.2022 A Sunday afternoon sometimes food... Melt 1-2 blocks of organic dark chocolate (approx 200gm) stir through 4 Tbsp each of puffed quinoa and hemp seeds then add 2 Tbsp of almond meal. 09.01.2022 The unassuming side salad... Always flexible and prepared to accept whatever you can find in your fridge! For this side salad I found some mixed green leaves , cucumber , capsicum , tomatoes and the absolute hero of every salad (in my opinion) avocado ... I also discovered some goats cheese, so threw this in too! For a bit of flavour I drizzled over some extra virgin cold pressed olive oil and balsamic vinegar and seasoned with sea salt and pepper. We served this with some @cleaversorganicmeat lamb blackstrap but you can serve this salad with just about anything! 01.01.2022 Excitement levels are high... about to eat one of my most favourite breakfasts! This bowl of goodness is absolutely BURSTING with NUTRITION. Rich in FIBRE (to keep us regular ) ESSENTIAL FATTY ACIDS (to keep our brain healthy and skin beautiful ) and SO many VITAMINS and MINERALS (especially magnesium and zinc). It is super quick and easy to prepare, just throw together... some natural yoghurt (I use coconut yoghurt ) with 2 Tbsp flaxseed meal, 1 Tbsp each of pumpkin seeds, sunflower seeds and sesame seeds and some frozen organic raspberries (I also love this with fresh organic blueberries or stewed apple ).
