09.01.2022 Smoked pulled Shazam Lamb shoulder on the Z Grill by a very statisfied customer! They said it was better than pulled pork. Cooking instructions:... Cooked low and slow until internal temp was 72 degrees Celsius, spritzing with a mix of water and apple cider vinegar every 45 mins or so. Once internal temp reached 72 deg, I put into aluminium tray with some beef stock and half a stubby, covered over tightly with al foil over top and let it cook until internal temp was 93 degrees Celsius. Let it rest for an hour before shredding (wrapped the whole tray in a towel and put in eski). It looks sensational and apparently tasted the same!
