12.01.2022 SPANNER CRAB This is a crab salad and is a favourite entre at Bangalay Dining. The dish is served with fennel sliced thin and marinated in dashi, which is a japanese style seaweed stock and apple. We also dust the dish with blackened blood lime (a native Australian desert ... lime) powder. To blacken the bloodlime they are slowly caramelized at 60 degrees for 3 months, similar to the process of making black garlic. The crab is gently poached and chilled, served cold with diced echallot, apple jelly, aoli, lime juice and white soy, creating a subtle seasoning that helps the crab shine.This dish pairs beautifully with Riesling or our locally produced Coolangatta Estate Semillion. 10.01.2022 NON-ESSENTIAL BUSINESS SHUTDOWN Bangalay Dining is classified as a non-essential business therefore will be required to abide by the NSW State and Australian Federal Government requirements you cease trading as of Tuesday. This is devastating to us as a business and our staff but we all need to make sacrifices to ensure the health and safety of our community. Today we should be celebrating 18 months of operations, instead we are contemplating how we can pull through this uncertain period. This year we’ve had plenty of adversary but we’ve also had incredible support with the empty esky and buy local campaigns and from big businesses who chose to hold their corporate offsites with us. We really appreciate everything and look forward to seeing you all again after this pause Michelle + the Bangalay Team
