01.01.2022 FERMENTED BARLEY Barley, inoculated with aspragillus oryzae (The mold used to make miso and soy sauce). Done over 48hrs in a very precise environment. The grain is then treated a bit like a risotto, mixed with caramelised onion and black funghi. The dish is garnished with a quince puree, chervil, barley crisps and slices of brush cherry; a type of lilli pilli that you will see alongside the road into Shoalhaven Heads.
