Alot of NZ use this type of wood hangi styles in the ground cooking for a solid heat source and superb smoke flavour. ... The smoke is slightly sweet It's has great properties similar to pecan wood / Fruitwood. If your chasing a different flavour or smoke in your barbecue this is it.
