23.01.2022 Extraction experiments

23.01.2022 As a barista I gain a lot from visiting different coffee establishments to get some inspiration for my work.

23.01.2022 Have you ever whipped the shower head between extractions to see the residue? I have found it incomparably better than purging.

23.01.2022 Learning to cup. I really enjoyed these beans from Fox and Bow in Canberra.

22.01.2022 It took 2 years but I finally was able to purchase a comandante grinder from Proud Mary Coffee. Thanks guys.

21.01.2022 A lot of you will already know this trick. Water + drop off detergent. I Recommend this for starting baristas or experienced baristas wanting to improve their silk.

17.01.2022 Big congratulations to Sasa Sestic for winning the Australian Barista Championship 2015. Colleague to some, boss to some, friend and mentor to many. Well deserved.

14.01.2022 My thoughts are with coffee lovers who will be at The Melbourne International Coffee Expo

14.01.2022 Drop it while it's hot

14.01.2022 I'm on the look out for some part time work at a specialty coffee cafe in Canberra.

13.01.2022 Concentrate on making the coffee taste better every time and you will always enjoy your brew.

12.01.2022 My friends pour nice tulips

12.01.2022 This pour reminds me of Master Sang.

12.01.2022 Generic colombian roasted by Van Der Veen Coffee. Tastes like toast and feels like apple acidity. Pretty clean with a mint like finish. Recipe - pour over V60 12g medium to fine grind, 205g 90C water (wish I had a bona vita kettle but I'm using espresso machine boiler water into a long spout hario kettle). Brew time 2 min 20 sec.

11.01.2022 My understanding of coffee has grown exponentially due to my curiosity

10.01.2022 Today I brewed with Alice estate coffee from Brazil. A beautiful sweet coffee.

08.01.2022 Synesso with wood turned handles for portafilter, steam handle and tamper. Happy coffee making.

05.01.2022 What a day. Starts of with an epic sunrise, I pour these two beautys then I get sent a gift from Alliance of Coffee Excellence. #happybarista #baristism

05.01.2022 Coffee science, art and flavour. As I extract I think about the processes that have come before me. The graph depicts a representation of flavour developments during a roast.

05.01.2022 Batch brew. I like it. On one hand bulk produced coffee beverages makes us think of burnt stayle American coffee. On the other carefully crafted specialty coffee can provide a fast delicious beverage to show case beans from select farms from around the world.

04.01.2022 I still coffee. I wonder if anyone looks here?

04.01.2022 Doppio - double espresso. Old school 60 ml in 30 sec. New school 20g dry in 45g brew weight out. Both methods require a lot of other elements to come together to taste great.

03.01.2022 I know I am having a good coffee when... It reminds me of flavours I know. The dark caramelisation appears on the crema. The flavours coat my tongue and smoothly leave without a bitter aftertaste. I get that tingly feeling on my tongue that lasts.
